Aqui está um caril de caranguejo que é bastante diferente dos caril cremosos que costumo afixar ou dos que faço durante as minhas oficinas de cozinha tailandesa. No entanto, é um caril que existe na Tailândia e que eu provei várias vezes em Banguecoque. É muito diferente porque, por um lado, não é feito de pasta de caril, mas sim de pó de caril, e Madras amarelas por isso. Depois há ovo no leite de coco, o que dá uma textura que se aproxima de um flan muito macio. Cozinha directamente na panela, na qual carameliza ligeiramente por baixo e é servido como está. Depois basta colocar o caril em cima e servir directamente com uma colher. Delicioso e fácil de fazer!
