O pão de milho, que talvez tenha descoberto na minha viagem culinária de Boston, é uma espécie de bolo de milho. Parece mais um bolo do que um pão. É delicioso fora do forno, mas também reaquecido no dia seguinte. O pão de milho é mais tipicamente sul-americano e pode ser encontrado num número infinito de receitas. É por isso que digo Boston, porque estive o mais próximo possível daquele que é servido no famoso restaurante de Boston. É muito fácil de fazer, mas terá de encontrar a farinha de milho. Pode ser encontrado na mercearia colombiana no 78, rue Dunkerque no 9º distrito de Paris. Agora também a pode encontrar nas lojas “orgânicas” Procurei, testei e ajustei esta receita que é a mesma que se encontra no restaurante de Boston, a “Union Oyster House”…
Receita para “pão de milho de Boston”:
-170g de manteiga mole -370g de açúcar -3 ovos -100g de óleo -1 pacote de fermento em pó (11g) -315g de farinha -180g de farinha de milho -2 colheres de chá de sal -240g de leite semi-desnatado
Pré-aquecer o forno a 180°C. Colocar a manteiga mole e o açúcar numa tigela. Usei o meu processador de comida kitchenaid para misturar tudo, é muito mais rápido!
Colocar a farinha de trigo, farinha de milho e fermento em pó numa tigela separada. Misturar bem.
Misturar a manteiga e o açúcar até ficar cremoso, depois adicionar os ovos inteiros.
Acrescentar o óleo e misturar novamente.
Acrescentar a mistura seca (farinha e levedura) e misturar bem.
Finalmente, adicionar o leite e deixar a folha a rodar (este é o “k” da kitchenaid ou kenwood) durante pelo menos 3 minutos.
A mistura resultante é espumosa.
Verter a massa para um molde de 23cm x 23cm quadrado ou rectangular, com manteiga e enfarinhado.
Colocar no forno durante 45 a 55 minutos, dependendo da potência do forno. O pão de milho vai inchar e dourar. Deve ser bem cozinhado no meio.
Sair e arrefecer num suporte de arame.
Cortado com uma serra de pão, o pão de milho é comido quente. Também pode ser aquecido no microondas durante alguns segundos.
