Este é um prato que muitas pessoas têm medo de experimentar. É pouco provável que não se veja a sua falta, uma vez que a cozedura é bastante precisa. Mas nada de demasiado complicado e o resultado é tão delicioso, que seria errado privar-se dele! Apresento-vos a técnica destes ovos acabados de cozer, com uma gema derretida misturada com o crème fraîche perfumado. Uma receita básica que pode ser adaptada com muitas coisas.
Receita para 4 “oeufs cocottes”:
4 grandes ovos de galinhas criadas ao ar livre
-20cl (cerca de 200g) creme completo
-sal, pimenta
-nutmeg
-20g de manteiga com sal
-Cebolinho picado
Colocar o creme numa caçarola.
Acrescentar sal, pimenta e noz-moscada.
Ferver durante 8 minutos em lume moderado.
Pré-aquecer o forno a 190°C.
Depois deste tempo, o creme engrossou um pouco. Verter em quatro ramequins individuais em porções iguais.
Colocar os ramequins num prato à prova de forno.
Partir um ovo em cada ramequim.
Adicionar água a ferver à panela até três quartos da altura dos ramequins. Adicionar uma pequena noz de manteiga salgada ao lado da gema e temperar com pimenta.
Cozer no forno a 190°C durante 8 minutos, mantendo um olho atento. Se o ovo estiver um pouco mal cozido, cozinhar em incrementos de um minuto, verificando. O creme permanece líquido, tal como a gema. Normalmente só o branco é cozinhado!
Adicionar um pouco de flor de sal e cebolinhas picadas.
