Apesar da sua semelhança, não são florentinas (uma receita que irei propor em breve!). Os “mielats” são biscoitos com uma base estaladiça e uma cobertura crocante e macia com mel, amêndoas em flocos e caramelo de laranja. Há algum tempo que procurava uma receita que fosse tão semelhante quanto possível à que tinha em mente, por isso tive de escolher e escolher, comparar, tentar ajustar-me para finalmente chegar a este ponto.
Esta receita e a quantidade de ingredientes que aqui sugiro são adequados para um tabuleiro de 30X40cm. Pode igualmente facilmente reduzir para metade as quantidades e assar o favo de mel numa forma menos perfeita do que um rectângulo. Pode ajustar tudo depois de cozer e cortar as bolachas à forma desejada!
Receitas para honeydews:
-125g de creme líquido -a casca de uma laranja -220g de açúcar -125g de água -60g de xarope de glucose -115g de manteiga mole -100g de mel de acácia -200g de amêndoas fendidas
Massa doce: -130g de açúcar de confeiteiro -1/4 colher de chá de sal
-1/2 colher de chá de baunilha -2 ovos -30g de pó de amêndoa -500g de farinha -350g de manteiga mole
Comece por preparar a massa. Procedo como faço frequentemente com uma massa feita por “creaming”. Isto significa que os ingredientes tais como ovos e manteiga são primeiro misturados para fazer um creme, depois a farinha é adicionada de uma só vez e misturada o suficiente sem insistir para manter a massa esfarelada e derretida. Coloque todos os ingredientes para a massa excepto a farinha e a manteiga na tigela do processador de alimentos ou numa tigela normal!
Misture bem com a folha do processador de alimentos (o “k” de kenwood ou kitchenaid!) ou com uma colher de pau, se não tiver um processador de alimentos.
Deixar virar durante 1 minuto e depois adicionar a manteiga.
Deixar virar durante 2 ou 3 minutos para obter um creme suave.
Acrescentar a farinha de uma só vez e mexer apenas o suficiente para a incorporar sem insistir.
A massa está pronta!
Colocar a massa inteira sobre uma folha de papel vegetal de 30x40cm.
Em seguida, colocar uma segunda folha de papel por cima. Estender a massa a 3mm entre estas duas folhas. Aparar o excesso para , apenas do tamanho da folha.
Colocar a massa numa assadeira do mesmo tamanho com uma borda queimada e deixar repousar no frigorífico durante pelo menos uma hora.
Após uma boa hora, pré-aqueça o forno a 180°C, pique a massa por todo o lado e depois coloque-a no forno durante pelo menos 20 -25 minutos para garantir que a massa seja colorida por todo o lado.
Aumentar a temperatura do forno para 190°C.
Enquanto a massa está a assar, preparar a parte de cima do mel de mel.
Coloque a casca de uma laranja finamente picada no creme líquido.
Colocar em lume brando para ferver. Assim que começar a ferver, remover do calor e deixar infundir.
Numa outra caçarola, colocar o açúcar, a água e o xarope de glucose em lume moderado.
Deixe a mistura ferver…
E caramelizar.
Quando o caramelo é uma bela cor de mogno (é bastante escuro mas não queimado!), volte a aquecer o creme para o adicionar quente ao caramelo. Misture bem, tendo cuidado para não salpicar. Mas se o creme for adicionado quente, não é um problema.
Em seguida, adicionar a manteiga.
E mel de acácia.
Misturar bem e levar a mistura a 125°C. Isto leva algum tempo! Agitando constantemente, demora cerca de 10-15 minutos.
Aqueça as amêndoas no microondas (se estiverem frias, o caramelo endurece imediatamente!) e verta o caramelo obtido.
Misturar bem.
Verter toda a mistura sobre a massa de massa quebradiça.
Alisar bem com uma espátula angulada ou mesmo com uma colher de pau. A coisa toda deve ser muito uniforme.
Colocar no forno por mais 20 minutos. É ainda necessário estar de olho nela regularmente para que não se queime tudo! Mas a superfície deve ser de mogno, e as amêndoas devem ser torradas! Retirar do forno e deixar arrefecer.
Transferir para uma nova folha de papel, retirando primeiro a que foi utilizada para cozer o bolo. Corte os bordos dos biscoitos e corte-os à medida!
