Esta receita de aspecto muito chinês, contudo, é completamente desconhecida na China . Por mais surpreendente que possa parecer, vem dos Estados Unidos. Mas foi inventado por um imigrante chinês, o Sr. Peng Chang-Kuei. Isto não impede que seja muito saboroso. Estes são pequenos fritos de frango, fritos duas vezes para uma textura estaladiça, depois fritos num molho doce e azedo, temperados se desejado. Gosto cada vez que encomendo este prato ali.
Receita de frango do General Tso:
-4 coxas de frango
-120g de clara de ovo
-130g de farinha de milho
-1 colher de sopa de óleo
-2 colheres de chá de molho de soja transparente
Molho do General Tso:
-250ml de caldo de galinha
-1+1/2 colheres de sopa de açúcar
-2 colheres de sopa de molho de soja transparente
-1 colher de sopa de molho de hoisin
-2 colheres de sopa de vinagre de arroz
-1 colher de chá de óleo de gergelim
-2 pitadas de pimenta
Para cozinhar o molho:
-1 colher de chá de amido de milho diluído em um pouco de água
-1 ou 2 dentes de alho
-um pedaço de gengibre fresco descascado
-2 ou 3 cachos de cebola ou cebola chinesa
2-3 malaguetas secas (opcional)
-Sementes de gergelim tostadas
Preparar o caldo de galinha. Nos EUA, eles vendem caldo pronto em tijolos. Em França, comprei simplesmente o caldo de galinha em pó e diluí-o como indicado (1 colher de chá por 100ml de água).
Acrescentar o açúcar.
Molho de soja.
O molho de hoisin, bem como o vinagre de arroz.
Adicionar também pimenta e óleo de sésamo.
Preparar o frango. Não utilizar carne branca, pois isso resultará em carne seca e sem sabor. Desossar e remover a pele.
Cortar cada coxa em 4 peças.
Preparar o resto dos ingredientes, as cebolas cortadas em fatias de 4cm, o gengibre em pequenas tiras e o alho em pequenos pedaços.
Preparar a massa de donut colocando as claras de ovo, o molho de soja e o óleo numa tigela.
Acrescentar a farinha de milho.
Misturar bem para obter uma pasta viscosa.
Acrescentar a galinha.
Misturar bem.
Aquecer uma panela de óleo em temperatura moderada a alta.
Quando o óleo estiver pronto, adicionar metade dos pedaços de frango, um por um.
Deixar cozinhar até começarem a dourar ligeiramente. Cozinhar a outra metade da galinha.
Quando todo o frango estiver cozinhado, devolver o óleo a um calor bastante elevado. O óleo deve estar quente. Devolver os pedaços de frango ao forno até estarem completamente dourados. Quanto mais dourados estiverem, mais tempo ficarão crocantes com o molho. A parte superior da coxa não se importa de ser cozinhada durante muito tempo, por isso pode cozinhar estes pequenos fritos muito bem.
Enquanto os fritos estão a cozinhar, aquecer óleo num wok em fogo alto e fritar o alho e o gengibre. Isto é quando a malagueta seca deve ser adicionada, se desejado.
Acrescentar as cebolas e deixar dourar.
Acrescentar todo o molho.
E deixá-lo ferver e reduzir.
Depois adicionar a farinha de milho diluída em um pouco de água para engrossar o molho.
Deixar para cozinhar.
Em seguida, adicionar os fritos de galinha quando estiverem todos castanhos dourados.
O conselho de Bernard: é realmente necessário cozinhar os donuts para que mantenham a sua textura estaladiça quando entram em contacto com o molho . Devem ser cozinhados ainda mais do que na foto abaixo. É realmente necessário colocá-los neste molho imediatamente antes de servir para os desfrutar o mais depressa possível!
Cubra bem os fritos com molho, polvilhe com sementes de sésamo tostadas e sirva imediatamente com arroz!
