Mas o que é que ele nos está a fazer agora? Não sabe o que são os crumpets? São pequenos “pães” com buracos que vêm do Reino Unido. Podem parecer estranhos para os não iniciados, mas recomendo que lhes dêem manteiga generosamente para o pequeno-almoço. A manteiga irá então preencher todos os pequenos buracos…. Um verdadeiro deleite! Como de costume, testei uma série de receitas de crumpet para finalmente chegar a esta que parece quase perfeita. A dificuldade é conseguir os buracos e é mesmo um tema de controvérsia em Inglaterra sobre como consegui-los… A solução está aqui!
Receitas para crumpets:
-460g de farinha
-3/4 colher de chá de creme de tártaro
-15g de levedura fresca ou 1 saqueta de levedura seca de padeiro
-1/2 colher de chá de açúcar
– 510ml de água quente
-10g de sal grosso
-1/2 colher de chá de bicarbonato de sódio
-140ml de leite
Comece por deitar a levedura e o açúcar numa tigela grande.
Adicionar 200ml (dos 510ml) de água morna. Misturar bem e deixar em pé durante 5-10 minutos. O líquido começará a espumar bem.
Entretanto, misturar a farinha e o creme de tártaro (lembro-vos que é um pó branco, ver receita de macarrões!).
Após 10 minutos, adicionar o resto da água (310ml) e a farinha de uma só vez. Misturar energicamente com um batedor durante pelo menos dois minutos.
Deixar a massa a levantar durante uma hora, cobrindo-a com um pano limpo.
Após esta hora de descanso, adicionar o sal grosso. Misturar vigorosamente por mais um minuto com o batedor.
Deixar a massa descansar novamente durante 15 a 20 minutos. Isto dá-nos tempo para preparar a frigideira e os anéis de crumpet.
Dica de Bernard: anéis de crumpets podem ser encontrados em ebay.uk.co e procurar por “crumpets rings”. Estes são os mesmos círculos utilizados para fazer ovos fritos. São anti-aderentes. Também pode usar círculos de espuma, mas terá de os untar com o spray de gordura que mencionei nos canelés!
Acrescentar o leite aquecido e bicarbonato de sódio.
Usei o meu bilig como para as panquecas!
Mas não entrem em pânico! Podem ser feitas numa frigideira com um calor moderado. Os círculos devem ser lubrificados com o spray de gordura, mesmo que não sejam pegajosos!
Deu-me uma desculpa para cozinhar no exterior ao sol! Coloco o bilig a 230°C. Colocar os anéis de crumpet em o bilig ou panela. Quando o bilig ou a panela estiver à temperatura, deitar uma concha cheia de massa nos círculos. A massa deve ter cerca de 1 cm de espessura, ou um pouco mais!
A massa vai começar a borbulhar muito rapidamente. Para fazer buracos nos crumpets, descobri que quando a superfície está quase cozida, rebentam-se as bolhas levantando o crumpet e sacudindo-o na vertical. As bolhas rebentam depois e deixam buracos! Uma vez cozidas as bordas, a carne pode ser retirada da panela. Isto deixa espaço para mais crumpets. Lubrificar bem os círculos de cada vez.
Assim, pode cozinhar vários crumpets ao mesmo tempo. Num bilig há muito espaço, por isso consegui cozinhar pelo menos 10 ao mesmo tempo! Mas, numa frigideira, será provavelmente limitado a 5…
Deixar cozinhar até a superfície estar pronta. Podem ser virados durante alguns segundos para terminar a cozedura, mas normalmente os crumpets só são cozidos de um lado. Mas mesmo algumas pessoas inglesas por vezes fazem-nos de ambos os lados. Prefiro apenas um lado e o outro lado branco e cheio de buracos para encher com manteiga salgada!
Para ser comido com manteiga que derreterá por cima, e depois uma boa camada de compota!
