Descobri recentemente que os meus sobrinhos são trituradores de chá. Nas férias em família, pediram-no para o seu pequeno-almoço (é verdade que também é bom de manhã!). Por isso pensei que esta era uma boa oportunidade para fazer um grande lote! Desta forma estaríamos seguros durante alguns dias. Bem não, porque quase devoraram tudo em dois dias. Os adultos certamente ajudaram um pouco, mas estas pequenas coisas são comidas rapidamente! Com um nome engraçado e uma cor que nada tem a ver com gosto, ofereço-vos a minha versão das crostas de chá na sua mais pura tradição.
Receita para crostas de chá (para um molde de 26X26cm)
Massa doce (suficiente para 2 tortas):
210g de farinha
125g de manteiga mole fria
35g de açúcar de confeiteiro
25g de pó de amêndoa
50g de ovo batido
pó de baunilha
Crosta de chá:
450g de pó de amêndoa
400g de açúcar pilão
250g de clara de ovo
1,5 colheres de chá de extracto líquido de amêndoa amarga (ou extracto de baunilha, ou extracto de flor de laranjeira ou extracto de chá verde matcha)
corante verde (amarelo+azul)
açúcar de confeiteiro para a decoração
Preparar a massa doce. Colocar todos os ingredientes excepto o ovo numa tigela ou na tigela de um processador de alimentos.
Bater com a folha do processador de alimentos (este é o K) até que a manteiga seja incorporada.
Nesta altura, adicionar o ovo previamente batido.
Ligue novamente só para incorporar o ovo batido, mas não mais!
Colocar metade da massa sobre papel vegetal. Ponha o resto em película aderente no congelador para outra tarte!
Colocar outra folha em cima da massa e enrolar com um rolo de massa até uma espessura de cerca de 2-3mm. Desta forma, não é adicionada farinha extra e a superfície de trabalho e o rolo permanecem limpos.
Encha a sua assadeira untada com manteiga ou melhor ainda, com um agente desmoldante.
Aparar as arestas para fazer um molde limpo.
Misturar a amêndoa em pó e o açúcar.
Adicionar os 250g de claras de ovo e o extracto de amêndoa amarga.
Verter também o corante verde. Este é opcional, claro, mas a crosta de chá ainda está curiosamente verde! Eu usei azul líquido e amarelo, mas se tiver um corante verde em pó, será perfeito!
Misturar bem.
Verter toda a mistura para a lata e cortar a massa a 5mm acima.
Desta forma, terá a altura certa.
Cozer durante 45 minutos a 180°C.
A crosta do chá é ligeiramente colorida, mas acima de tudo a massa deve ser castanha dourada.
Deixar arrefecer durante 10 minutos, depois retirar do molde e deixar arrefecer numa grade de arame.
Polvilhar generosamente com açúcar de confeiteiro.
Fatiar e guardar as cascas de chá numa caixa hermética.
