Há um ano atrás, publiquei a minha viagem culinária de Ho Chi Minh (que pode ler AQUI). Prometi-lhe receitas. Aqui está um novo com esta deliciosa carne de porco caramelizada. A bela cor é completamente natural e o molho é muito rico em sabor. Muitas receitas sugerem um tempo de cozedura bastante curto, mas eu prefiro obter uma carne muito tenra, e a única maneira de o fazer é cozinhá-la durante mais tempo. Pode servir esta carne de porco (e cozinhá-la ao mesmo tempo) no prato tradicional de barro vietnamita e/ou acompanhá-la com moedas de ovos cozidos.
receita para 2-3 pessoas:
-600g de carne de porco (aqui já usei barriga cortada, mas o lombo também serve) -100g de açúcar -3 colheres de sopa de nuoc mâm -1 colher de chá de caldo de galinha em pó -2 colheres de sopa de óleo -1 chalota -1 ou 2 cebolinhas chinesas -1 pequena pimenta vermelha -1 ovo cozido – pimenta preta do moinho
Para este prato, utilizei peito fresco. Simplesmente removi a pele, que pode, naturalmente, deixar. Esta peça é bastante gorda. É frequentemente esta peça que está neste prato no Vietname. Não hesite em usar o lombo sem osso.
Colocá-lo num recipiente e adicionar 20g de açúcar (dos 100), as 3 colheres de sopa de nuoc mâm, o caldo de galinha em pó. Misturar bem.
Colocar os restantes 80g de açúcar numa caçarola em lume bastante forte.
Deixe-o derreter suavemente sem o queimar.
Deve ter uma cor agradável. Quando for este o caso, deitar 350ml de água na panela. Vai fazer algum barulho, isso é normal!
Acrescentar a carne com a sua marinada.
Verter o óleo e deixar ferver.
Cortar a chalota em pequenos pedaços. Pegar na parte mais branca do cebolinho e cortá-lo em pedaços. O mesmo se aplica à pequena pimenta vermelha.
Para a frigideira! Para as pimentas, pode-se retirar algumas das sementes para evitar ter um prato demasiado forte. Este não é o objectivo desta receita.
Agora deixar cozinhar em lume moderado durante pelo menos 1 a 1,5 horas.
Depois deste tempo, a carne deve ser muito tenra e o molho deve engrossar muito ligeiramente. A cor torna-se vermelha e a gordura da carne transparente. Acrescentar pimenta preta moída na altura.
Se a carne não estiver cozinhada, adicionar um pouco de água e continuar a cozinhar. Pode repetir até que seja perfeito ao seu gosto! Como diz um comentário abaixo, o molho deve ser bastante líquido, afinal de contas.
Servir a carne de porco em caramelo com o cebolinho verde picado. Também se pode adicionar um ovo cozido cortado em quartos. Um verdadeiro deleite! Servir com arroz simples.
