Há já algum tempo que ando a pensar em publicar uma receita de pão de passas ou de caracóis de pistache de chocolate. Não longe de onde vivo, há La Gambette à pain, que oferece muitos tipos diferentes de pão, e em Du Pain et des Idées encontrará muitos incrivelmente apetitosos. Fiz várias tentativas para obter a textura que procurava. O resultado está para além das minhas expectativas! A vantagem é que não se perde massa ou natas, tudo é cozinhado (muitas vezes com massa folhada, apanha-se restos…).
Receita para 18 caracóis grandes de pistachio de chocolate:
Massa folhada com caracol :
500g de farinha
1 saqueta de levedura de padeiro desidratada ou 15g de levedura fresca
70g de açúcar
8g de sal
70g de manteiga mole DOP Charentes Poitou com 82% de teor de gordura
60g de ovo
50g de leite
200g de água
300g de manteiga Charentes Poitou DOP com 82% de teor de gordura para a massa folhada
Creme de pastelaria
250ml de leite semi-desnatado
60g de açúcar
25g de manteiga
50g de gema de ovo
25g de farinha de milho
uma boa pitada de baunilha em pó
70g de pasta de pistachio
100g de pedaços de chocolate
Colocar a farinha, os 70g de manteiga mole e os 60g de ovo no processador de alimentos. Colocar a levedura de um lado e o açúcar e o sal do outro.
Adicionar a água e o leite.
Amassar a uma velocidade média.
Deixar amassar até que a massa saia do fundo da tigela. Cerca de 8-9 minutos.
Deixar a massa subir durante 45 minutos a 40°C, ou 1,5 horas à temperatura ambiente. Colocar um pano sobre a tigela durante o processo de crescimento.
Depois deste tempo, degaseificar a massa, depois embrulhá-la com película aderente e pô-la no frigorífico durante pelo menos 4 horas, ou melhor, de um dia para o outro.
Colocar os 300g de manteiga Charentes Poitou DOP numa moldura quadrada de 16cm, colocada sobre um tabuleiro e forrada com película aderente.
Alisar o mais possível para que a manteiga seja espalhada uniformemente. Feche o filme e mantenha-o num local fresco.
Fazer o creme de pastelaria.
Colocar os 50g de gemas de ovo numa tigela com o pó de baunilha, metade do açúcar e o pó de farinha de milho.
Misturar bem com um batedor.
Ferver o leite com a outra metade do açúcar e a manteiga.
Quando o leite estiver a ferver, deitar uma pequena quantidade sobre a mistura de gema de milho.
Misturar bem.
Verter a mistura de volta para a panela com o restante leite quente.
Regresso a uma temperatura baixa. Ferver durante três a quatro minutos enquanto se está a bater.
Verter o creme para dentro de um prato.
E cobrir com película aderente directamente em contacto com o creme. Deixar arrefecer completamente e depois armazenar num local fresco.
Quando quiser fazer as rondas, retire a manteiga 15 a 30 minutos antes de a fazer e a massa no último momento. A manteiga deve ser um pouco maleável, pelo que o tempo depende da temperatura ambiente. Trabalho sobre uma superfície de trabalho enfarinhada. Colocar a massa fria por cima e enrolá-la num rectângulo de 32 cm de comprimento e 16 de largura, do mesmo tamanho que o prato de manteiga.
Dobrar a massa sobre o meio para cobrir a manteiga. Virar 90°.
Estender-se num rectângulo 4 vezes mais longo do que o seu comprimento.
Dobrar a massa sobre cerca de um quarto, depois juntar a outra borda.

Envolver a massa em película aderente e deixá-la a descansar durante 20 minutos num local fresco. Desta vez, estender-se num rectângulo 3 vezes mais longo e dobrá-lo em terços para uma única volta.
A massa está acabada. Deixar repousar num local fresco durante 10-15 minutos antes de rolar para um rectângulo de 30cm x 50cm.
Colocar o creme e a pasta de pistachio no processador de alimentos e bater durante 3 minutos até ficar muito suave.
Espalhar o creme por toda a superfície e polvilhar com lascas de chocolate.
Enrolar a massa longitudinalmente para os caracóis grandes ou largamente para os mais pequenos.
Colocar a massa no congelador durante pelo menos 3 horas antes de cortar em fatias de 1cm de espessura.
Colocá-los sobre um tabuleiro (neste caso um tabuleiro grande de 60 x 40cm). Numa placa de 30×40 cm, colocar um máximo de 5 para os caracóis grandes, ou 8 para os mais pequenos.
Deixar a massa chegar à temperatura ambiente e depois deixá-la subir durante 2 horas.
Cozer no forno a 190°C durante 15 a 20 minutos, dependendo da cor desejada!
