Tendo acabado de regressar da Grécia, onde comi uma baklava diferente quase todos os dias, inspirei-me para fazer a versão bastante arménia (mas também encontrada na Grécia e na Turquia), com aquela textura enrugada que dá uma crocante maravilhosa. É claro que pode adicionar qualquer fruta seca que desejar (amêndoas, pistácios, avelãs, castanhas de caju). Este pequeno doce é muito fácil de fazer e estará pronto em pouco tempo!
Receita para um prato de 20cm:
100g de ghee (manteiga clarificada)
100g de manteiga (usei semi-salgado)
250g de nozes
30g de açúcar
12 folhas de massa filo
Para o xarope:
240g de açúcar
40g mel
130g de água
Derreter a manteiga e o ghee numa frigideira. Só se pode usar ghee ou apenas manteiga. Usei metade e metade e com manteiga semi-salgada, que não é necessariamente muito tradicional, mas deliciosa!
Juntar as nozes e os 30g de açúcar e misturar num pó grosseiro.
Colocar uma folha de massa filo sobre a superfície de trabalho. Polvilhar com gordura derretida, colocar uma segunda folha em cima da primeira e polvilhar novamente. Não é necessário cobrir tudo com manteiga, apenas algumas manchas.
Polvilhar com nozes/açúcar. Usei um rolo muito fino que comprei na Arménia, mas podem encontrar um pau de madeira fino em lojas de ferragens ou em Leroy Merlin!
Enrolar a folha, começando pelo lado da largura.
Pressionar a massa contra um parapeito ou contra a parede da superfície de trabalho.
Forçar a massa para a borda, segurando-a com firmeza suficiente para a esfarelar.
Retirar cuidadosamente o pau de madeira e colocá-lo num prato forrado com papel vegetal.
Fazer o mesmo para os outros rolos. Coloco um na outra direcção para bloquear os outros. Por isso, fiz 6 rolos no total.
Cozer a 175°C durante 30 a 35 minutos num forno pré-aquecido com calor de ventilador. Durante a cozedura, faça a calda, levando todos os ingredientes a ferver durante 10 minutos em lume brando. Verter o xarope directamente do forno para a superfície da baklava.
Deixar arrefecer até à temperatura ambiente antes de cortar em pedaços e morder neles!
Mettez le beurre et le ghee à fondre dans une casserole. Vous pouvez ne prendre que du ghee ou au contraire que du beurre. J'ai mis moitié moitié et avec du beurre demi-sel, ce qui n'est pas forcément très traditionnel, mais délicieux !
Mettez les noix et les 30g de sucre ensemble et mixez le tout en une poudre grossière.
Placez une feuille de pâte à filo sur le plan de travail. Arrosez de matière grasse fondue, placez une deuxième feuille sur la première puis arrosez à nouveau. Il n'y a pas besoin de couvrir entièrement de beurre, juste par endroits.
Parsemez de noix/sucre. J'ai pris ici un rouleau très fin que j'avais acheté en Arménie, mais vous pouvez trouver une fine baguette de bois dans les quincailleries ou chez Leroy Merlin !
Enroulez la feuille en commençant sur le côté de la largeur.
Plaquez la pâte contre un rebord ou le mur du plan de travail. Forcez la pâte vers le rebord, en tenant assez fermement pour la friper. Retirez délicatement la baguette de bois puis placez dans un plat de 20cm de côté garni de papier sulfurisé.
Faites de même pour les autres rouleaux. J'ai mis un dans un autre sens pour bloquer les autres. J'ai donc fait 6 rouleaux au total.
Mettez à cuire à 175°C pendant 30 à 35 minutes dans un four préchauffé sur chaleur tournante. Pendant la cuisson, faites le sirop en portant à ébullition tous les ingrédients pendant 10 minutes sur feu doux. Versez le sirop directement à la sortie du four en le répandant sur toute la surface des baklavas.
Laissez refroidir à température ambiante avant de couper en morceaux et de mordre dedans !
