Um lindo bolo sazonal com a cor natural da abóbora. Este bolo é perfeito para um lanche. É tão suave quanto se quer e irresistível graças aos pecans. Adiciono um pouco de óleo de nozes, manteiga salgada e uma pitada de canela. Como sempre fiz durante os últimos dois anos no meu blogue, recomendo cozinhar e comer muito suavemente no dia seguinte, depois de uma noite no frigorífico.
Para um bolo de 25cm:
250g de carne de abóbora cozida a vapor
2 ovos grandes
290g de açúcar
80g de óleo de nozes
85g de manteiga semi-salgada derretida
355g farinha T55
1 colher de chá de canela
6g de fermento em pó
150g de nozes pecans (ou nozes)
Para obter 250g de carne de abóbora cozida, tomar 400g de carne crua com a pele. Pode usar um pouco mais, mas pode colocar o excesso numa sopa.
Cozinhar a abóbora a vapor durante 15-20 minutos. Uma faca deve caber facilmente.
Desta vez pesa os 250g necessários. Misturá-los finamente.
Adicionar os ovos, óleo de nozes e manteiga semi-salgada derretida.
Acrescentar também o açúcar e a canela.
Misturar bem e depois adicionar a farinha e o fermento. 6g de fermento em pó é suficiente.
Verter os pecans e misturar bem.
Acabou!
Verter a massa para uma forma de bolo forrada com papel vegetal.
Cozer a 150°C durante 55 minutos, depois 30 minutos a 130°C com vapor, se tiver a possibilidade. Em alternativa, durante os últimos trinta minutos, deitar água a ferver numa caçarola no fundo do forno. O bolo inchou muito bem!
Deixar arrefecer completamente, depois embrulhá-lo em película aderente. Colocar no frigorífico de um dia para o outro antes de comer.
