Na América do Sul, estes bolos são muito populares, mas acima de tudo são muito variados nas suas formas e composições. Aqui está a minha receita de alfajores que devorei em Lima, Peru. São pães curtos à base de farinha e amido de milho, colados com dulce de leche. Não deixarei de lhe oferecer novas e diferentes receitas para alfajores num futuro próximo!
Receita para 21 alfajores cheios de 6cm de diâmetro:
300g de farinha
260g de farinha de milho
140g de açúcar de confeiteiro
100g de gema de ovo
230g de manteiga mole
2 colheres de sopa de água
500g de dulce de leche (receita da minha casa AQUI)
açúcar de confeiteiro
Coloque a farinha, farinha de milho e açúcar de confeiteiro na tigela do seu processador de alimentos ou numa tigela.
Misturar e adicionar as gemas e a manteiga derretida.
Misturar com a ponta dos dedos ou com um processador de alimentos.
Adicionar as duas colheres de sopa de água e misturar até que a mistura se junte.
Envolver em película aderente e arrefecer durante 1 hora.
Estender a massa até uma espessura de 4mm.
Usando um cortador de biscoitos de 6cm, cortar rodelas de massa e colocar sobre uma folha de cozedura forrada com papel vegetal.
Cozer a 165°C durante 17 minutos. Os alfajores devem permanecer brancos.
Deixar arrefecer numa assadeira.
Colocar o dulce de leche (a receita caseira é AQUI) num saco de tubagem (bocal de 8 ou 10mm).
Guarneça todos os outros pães curtos.
Colocar um segundo bolo no dulce. Os alfajores estão quase prontos.
