Aqui está uma receita de gaspacho, aquela maravilhosa sopa fria de legumes. Existem principalmente tomates. Proponho uma versão simples, feita apenas com vegetais (excepto para o vinagre e o azeite). Tem de o fazer com um pouco de antecedência para que possa deixar para arrefecer suficientemente no frigorífico. Delicioso nesses dias quentes de Verão!
Há muitas receitas de gaspacho. Há alguns com migalhas de pão. Experimentei-o e prefiro a versão que contém apenas vegetais. Esta receita pode ser encontrada em Espanha, contudo, porque há variações, tal como as panquecas aqui. Esta receita não é fixa e eu convido-o a adaptá-la ao seu gosto!
Receita para gaspacho de tomate:
-1kg de tomate maduro -1 pepino -2 pimentos vermelhos -2 dentes de alho -1/2 cebola branca -5cl de vinagre de xerez -10cl de azeite -sal, pimenta
-1 colher de sopa de pasta dupla de tomate (opcional para mais sabor a tomate!)
Aqui estão todos os ingredientes para a receita que estou a propor:
Comece por descascar os pimentos vermelhos. Com um bom ecónomo, isto não é problema nenhum!
Retirar a parte branca no interior e livrar-se das sementes.
Descascar o pepino.
Cortar ao meio longitudinalmente e retirar a parte do meio com uma colher.
Descascar a cebola e cortá-la ao meio. Eu só uso meia cebola, porque senão o gaspacho é demasiado forte.
Mergulhar os tomates em água a ferver durante 20 segundos, tendo o cuidado de os cortar por cima.
Retirar a pele.
Remover também a parte onde se encontrava o ramo. Em seguida, remover as sementes, apertando os tomates.
Descascar o alho.
Colocar todos os legumes num liquidificador.
Acrescentar vinagre, sal e pimenta.
Depois o azeite.
Ligar o misturador durante pelo menos um minuto para reduzir a uma sopa fina.
Pode acrescentar uma colher de sopa de pasta dupla de tomate nesta altura (o que eu fiz!). Isto irá melhorar o sabor do tomate. Mas isto não é necessariamente muito tradicional, mas ainda assim muito bom!
