Com o tempo frio a regressar, queria mesmo aquecer com uma deliciosa sopa de castanhas. Tenho sempre um pacote de castanhas no congelador em caso de uma emergência deixada pela época festiva. As vantagens desta receita: a sua rapidez, o seu sabor, o seu lado chique por um preço muito modesto! Servido com fatias finas de foie gras ou pedaços estaladiços de bacon, é perfeito para ocasiões especiais. Vamos finalmente aproveitar o facto de que o Inverno está de novo em vigor para um prazer não tão culpado. (Embora ainda seja rico!)
Receita de sopa de castanha para 6 pessoas:
-1 cebola -2 colheres de sopa de azeite de oliva -750g castanhas congeladas ou cozidas -500ml de caldo de galinha -350ml de leite (ou mais dependendo da consistência desejada, a ajustar no final da cozedura) 200ml de creme completo (ou 15% de creme magro) -sal, pimenta -200ml de natas batidas para servir (opcional) -Terrina de foie gras ou pedaços de bacon estaladiço (opcional) -Cebolinho picado
Cortar a cebola em pedaços (não importa a forma!). Aquecer o azeite numa panela grande e adicionar as cebolas.
Cozinhar durante 2-3 minutos, agitando e depois adicionar as castanhas . Aqui, peguei nas castanhas cruas congeladas de Picard que são perfeitas. Também pode utilizar castanhas cozinhadas em frascos. Neste caso, o tempo de cozedura será mais curto.
Adicionar os 500ml de caldo de galinha.
Depois o leite. Acrescentar sal e pimenta a gosto.
Levar ao lume e depois baixar o lume para ferver durante 15-20 minutos (para castanhas cruas) ou 10 minutos (para castanhas cozidas).
No final da cozedura, remover 6-7 castanhas que tenham sobrevivido ao processo de cozedura e que ainda sejam bastante bonitas.
Utilizá-los-emos para o serviço.
Misturar a sopa com uma varinha mágica ou numa misturadora.
Acrescentar o creme líquido.
Misturar até se obter uma consistência aveludada e agradável. Para a consistência, adicionar um pouco de leite se necessário e ajustar o tempero .
Mantenha-se quente. Pouco antes de servir (isto é opcional, já que é rico!) chicotear o creme. Para tal, colocar o creme com a tigela e os batedores no frigorífico durante meia hora.
Bater a mistura numa nata batida e adicionar um pouco de sal.
Quando chegar à mesa, sirva o velouté com uma colher de sopa de chantilly salgado (aqui derreteu rapidamente quando tirou as fotos!), depois polvilhe com cebolinho recém picado e pedaços de castanhas.
A sopa pode ser servida com uma fina fatia de terrina de foie gras ou um pedaço de bacon estaladiço.
Servir sem demora e comer ruidosamente (ou não se quiser manter uma tampa sobre ela).
