Les travers de porc cantonais, sont en fait braisés pendant presque une heure puis caramélisés sur feu plus vif en fin de cuisson. Ils sont très simples à réaliser et vraiment délicieux! Malgré le fait que cette recette soit originaire de Canton (Guangzhou), je l’ai apprise à Pékin!
Mettre une cuillerée à soupe d’huile dans le wok sur feu assez fort. Ajouter le gingembre en petits morceaux.
Ajouter les travers de porc en morceaux et bien mélanger toujours sur feu assez vif.
Ajouter les 200ml d’eau et le sucre.
Puis les sauces de soja, la claire et la foncée.
Couvrir partiellement et baisser le feu. Laisser cuire de cette façon pendant presque une heure ou jusqu’à ce que le niveau de l’eau ait baissé.
En fin de cuisson, augmenter le feu et bien mélanger pour que le jus de cuisson épaississe et disparaisse presque complétement pour bien enrober tous les morceaux de porc.
Servir immédiatement avec des nouilles sautées ou du riz! Le porc est alors fondant et la viande se détache très facilement de l’os!
