Voici quelques temps, Traou Mad avait beaucoup aimé mon petit reportage que j’avais réalisé sur leur usine à Pont Aven (voir le reportage ICI). Ils m’ont depuis demandé de réaliser quelques recettes pour leur blog: http://blog.traoumad.fr/. J’ai donc eu le plaisir de recevoir à la maison, un colis rempli de merveilles! Je continue mon partenariat avec mes petits gâteaux bretons favoris, les « traou mad »… Pour le mois de mars, je vous propose une petite recette simple et rapide, mais toutefois délicieuse, fraîche et croustillante! Je me sers du traou mad comme base, comme une petite tartelette, que je garnis ensuite de confiture de myrtilles, de crème fouettée, de myrtilles fraîches et d’une onctueuse crème de marrons. Tellement facile, que l’on peut en faie plein pour un buffet sucré!
Mettre dans un bol, la purée de marrons non sucrée, la crème de marrons vanillée (et très sucrée!!) et le rhum ambré.Note de Bernard: Si je mélange la purée de marron ET la crème de marron vanillée, c’est que je trouve qu’avec uniquement la crème, le résultat serait trop sucré. La purée est sans sucre et rééquilibre l’ensemble.
Mélanger au fouet électrique pendant 5 minutes.
Ajouter le mascarpone et continuer de fouetter pendant 2 à 3 minutes.
Préparer les traou mad en mettant une demi cuillerée à café de confiture de myrtilles au centre.
Ajouter un peu de crème fouettée.
Disposer une myrtille sur la crème fouettée.
Mettre la crème de marrons dans une poche munie d’une douille cannelée et garnir en réalisant un dôme de crème de marrons sur la chantilly.
Finir en ajoutant une myrtilles sur le dessus et un peu de sucre glace.
Laisser reposer au frais une heure avant de servir.
