Voici le « tamagoyaki » que j’ai appris à faire grâce à Kazuo, propriétaire du restaurant Hinodeya au 71, rue du Trône à Bruxelles, que je vous invite à découvrir. Oui, je suis allé jusque là pour rencontrer Kazuo qui voulait m’apprendre des recettes japonaises. L’un des avantages d’avoir un blog de cuisine est de pouvoir faire de nombreuses rencontres toujours enrichissantes ! J’ai appris avec lui quelques tours de main pour faire les sushis et les makis. Je les aborderai plus tard sur le blog. Mais pour commencer, je vous présente le tamagoyaki, tamago signifiant œuf et yaki: grillé. Il s’agit donc d’une omelette japonaise, mais très particulière car elle est légèrement sucrée et contient également du dashi. C’est surtout sa conception qui vaut le coup d’œil ! Vous pourrez la manger chaude tiède ou froide, peu importe et la dévorer telle quelle ou alors sur du riz pour en faire des sushis.
Dans les 40ml (ou grammes) d’eau, mettez le sucre.
Ajoutez le dashi en poudre. Le dashi est une poudre japonaise à base d’algues et de bonite séchée que l’on trouve donc en supermarché asiatique dans les magasins japonais. Mélangez le tout jusqu’à ce que le sucre et le dashi aient disparu.
Cassez les œufs entiers dans un récipient et battez-les en omelette.
Ajoutez le liquide à base de dashi sucré et mélangez de nouveau.
Voici la poêle à tamagoyaki . Vous la trouverez sur internet ou toujours dans les supermarchés japonais. Huilez-la légèrement.
Versez un peu de préparation, environ 2mm d’épaisseur.
Laissez cuire puis pliez en deux.
Versez de nouveau un peu de préparation en soulevant l’omelette déjà cuite pour que le liquide passe dessous.
Une fois que l’œuf est saisi, rabattez la partie de droite vers la gauche.
Faites glisser l’omelette vers la droite.
Puis recommencez: versez le liquide, faites-le passer sous l’omelette en la soulevant avec une spatule ou des baguettes.
Une fois saisi, rabattez le tout vers la gauche puis hop on glisse vers la droite.
Faites cela jusqu’à ce qu’il n’y plus d’omelette. Une fois terminé, faites glisser le tamagoyaki sur une assiette.
Vous pouvez le déguster chaud en le coupant en tranches, ou alors le laissez refroidir totalement, en le mettant ensuite au frais pour le manger bien froid, ou même en sushi !!
