Il y a quelques temps, j’allais souvent en Asie, au Japon. J’aime tellement la cuisine de quasiment tous les pays asiatiques ! Je pense que cela se ressent dans mes livres et mon blog, mais aussi dans mes ateliers ! Ce n’est pas au Japon que j’ai découvert ces étonnants sushi, mais en Chine ! J’avoue avoir été sceptique au départ, mais comme j’aime beaucoup le foie gras poêlé, j’ai voulu tenter. Et j’ai immédiatement adoré. Les saveurs classiques d’un sushi (le riz vinaigré, la sauce de soja qui l’accompagne, le wasabi qui vient relever le tout) se mélangent à la perfection avec le foie gras, ici chaud et poêlé. Cela n’a rien de traditionnel, j’en ai bien conscience, mais comme il est peu probable que je voyage autant qu’avant, et que j’avais du foie gras cru au congélateur, j’ai voulu mettre cette recette sur mon blog.
Commencez par faire cuire le riz à sushi. Pesez-le puis rincez-le à l’eau claire pendant 1 minute dans un tamis. Égouttez-le puis mettez dans le rice cooker avec les 280ml (ou grammes c’est pareil) d’eau. Mettez-le à cuire. Il y aura plus de riz que nécessaire pour les sushi au foie gras, mais vous pourrez faire un shirashi en même temps ou faire d’autres sushi.
Pendant ce temps, préparez le vinaigre sucré en mélangeant tous les ingrédients ensemble.
Transvasez le riz cuit dans un récipient puis versez le vinaigre sucré petit à petit. Mélangez doucement pour ne pas briser le riz. Quand tout le vinaigre a été ajouté, mettez un film étirable au contact pour éviter son desséchement.
Préparez le poireau.
Coupez la racine et enlevez une partie des feuilles vertes. Lavez-le et essuyez-le puis coupez-le en tronçons de 8cm. Coupez en deux chaque tronçon dans la longueur puis émincez finement.
Mettez une petite casserole ou un wok d’huile à chauffer à 180°C. Mettez le poireau à frire pour qu’il soit bien doré.
Préparez le riz. Je fais des boulettes de 25g, en m’aidant d’un peu d’eau pour que le riz ne colle pas aux doigts. Façonnez la boulette en un joli petit sushi.
Posez-les sur une assiette au fur et à mesure.
Mettez un peu de wasabi sur le dessus.
Coupez les tranches de foie gras cru. J’avais le mien au congélateur depuis un moment !
Faites-le revenir doucement à la poêle sur feu modéré, sans mettre de gras, il va déjà en rendre pas mal !
Retournez pour colorer l’autre côté.
Quand vous passez à table (ce plat n’attend pas ! ) mettez une tranche de foie gras par sushi, un peu de poireau frit, et la sauce de soja à disposition !
