Voici une nouvelle recette de « salade » de poulet, au riz trois couleurs, ananas, noix de coco, noix de cajou et coriandre. Je m’inspire de tout, tout le temps, et quand je vois quelque chose qui me plait, je le refais toujours à la maison pour vous en proposer la recette. J’avais vu cette salade étonnante dans une grande épicerie. Servie bien fraîche, elle sera parfaite pour les beaux jours (ou du moins pour se donner l’illusion, si le soleil joue à cache-cache).
Commencez par faire griller les blancs de poulet à la poêle. Salez et poivrez à votre goût.
Ils doivent dorer. Faites-les surtout bien cuire à cœur ! Pour cela, je mets un peu d’eau (un très léger fond) dans la poêle quand ils sont bien colorés et je mets un couvercle. Cela va faire une tonne de vapeur. Quand l’eau s’est évaporée, normalement le poulet est bien cuit. Laissez-le refroidir.
Faites cuire votre riz comme indiqué sur le paquet.
Hop c’est cuit ! Rincez-le bien à l’eau froide pour stopper la cuisson et le refroidir totalement.
Égouttez-le parfaitement. Placez-le ensuite dans un récipient. Ajoutez la ricotta, l’huile d’olive et le curry jaune en poudre.
Mélangez bien.
Quand le poulet est froid, ou du moins tiède, coupez-le en morceaux que vous mettrez dans le riz.
Hachez finement quelques branches de coriandre.
Coupez l’ananas en morceaux en enlevant les « yeux ».
Versez la noix de coco râpée.
Écrasez grossièrement les noix de cajou.
Mélangez bien, la salade est prête. N’hésitez pas à ajouter d’autres fruits secs (raisins, canneberges, amandes etc.). Salez et poivrez à votre goût.
Placez-la au réfrigérateur jusqu’au moment de servir !
