Quand je me retrouve à New York, je vais toujours chez Whole Foods Market (voir le reportage ICI) où ils proposent d’improbables salades qui se révèlent à chaque fois très bonnes (vu le prix, c’est normal !). Je vous propose ma version d’un des ces salades. Le goût est unique est au premier abord très surprenant. Mais on devient vite accro à ce goût sucré-salé et au mélange de textures: les noix croquent, l’orange confite apporte du moelleux. Tout cela avec de la coriandre fraichement ciselée et un peu de curcuma. C’est tout bonnement addictif et surtout très original ! Et en plus c’est l’occasion d’utiliser le quinoa différemment… Et avec les beaux jours qui reviennent, c’est l’occasion de mettre du peps dans les pique-niques !
Voici le quinoa pour celles et ceux qui ne le connaissent pas encore…! L’un de mes aliments de prédilection !
Mettre de l’eau salée à bouillir puis ajouter le quinoa et le laisser cuire 16 minutes en remuant de temps en temps.
Égoutter (dans un tamis fin car la passoire laisserait passer les grains de quinoa).
Rincer à l’eau froide pour refroidir tout le quinoa.
Bien égoutter puis transvaser dans un récipient et ajouter les fruits séchés: pécan, amandes effilées, raisins, oranges confites, canneberges, graines de courges.
Ajouter également l’huile d’olive.
Le jus d’orange et le miel.
Saler, poivrer et ajouter l’ail en poudre (on le trouve facilement en épicerie maghrébine ou asiatique).
Ajouter aussi le curcuma.
Bien mélanger.
Je n’ai pas mis trop de coriandre, un tout petit bouquet suffit.
Le hacher finement et l’ajouter dans la salade.
Bien mélanger, c’est prêt ! Il suffit de laisser au frais deux heures avant de servir. Bien sûr, il faut goûter pour ajuster le sel et le poivre et à son propre goût pour le dosage des fruits.
