Elle n’a l’air de rien, mais une fois que vous aurez commencé à y goûter, cette salade s’avérera complètement addictive ! J’ai découvert cette salade de cacahuètes dans le petit restaurant « Raviolis Nord-Est Chine » rue Civiale à Belleville à Paris. À chaque fois que j’y vais, je me régale de leurs délicieux raviolis. Et maintenant que mon atelier est à quelques stations de métro, j’y déjeune à chaque fois que je vais faire des courses pour mes cours de cuisine thaïe. À 5€ l’assiette de 10 raviolis, je me fais plaisir ! Et souvent pour patienter, je prends cette salade de cacahuètes. Ce qui est amusant, c’est que le seul élément cuit est la cacahuète. Elle est en effet bouillie pendant plus d’une demi-heure alors qu’ici la carotte et la courgette sont crues. La sauce est piquante juste comme il faut. Je préfère vous le dire tout de suite : cette salade se picore du bout des baguettes, car si vous y allez à la fourchette pour enfourner une grosse bouchée, cela va être long à mâcher ! Mettez donc une assiette pour deux ou trois personnes au milieu de la table et dégustez les éléments un à un. Une fois que j’ai commencé, je n’arrive tout simplement plus à m’arrêter, surtout avec une bière bien glacée !
Mettez à bouillir une grande quantité d’eau salée. Versez les cacahuètes et laissez les cuire 35 minutes.
Préparez les crudités. Coupez en tranches puis en morceaux les courgettes (ou concombres) et les carottes.
Mettez-le tout dans un récipient.
Quand les cacahuètes sont cuites (elles ont bien gonflé), rincez-les à l’eau froide pour bien les refroidir puis égouttez-les soigneusement.
Versez-les dans le récipient. Ajoutez la gousse d’ail écrasée.
Voici les sauces. Dans l’ordre de gauche à droite: la sauce de soja foncée, le vinaigre noir, l’huile pimentée, la sauce de soja claire et l’huile de sésame grillé.
