Ces sablés sont absolument divins… Vous connaissez peut être maintenant mon amour des petits gâteaux. Ceux ci accompagnent à merveille les glaces et surtout la crème glacée au caramel au beurre salé. Ils sont délicats et si vous les réalisez comme il le faut, ils seront bien friables mais avec une tenue parfaite. J’utilise ici la méthode par crémage de la pâte pour un résultat délicieux. Celle-ci consiste à mélanger d’abord le sucre et le beurre avant d’incorporer très rapidement en une fois les ingrédients secs.
Cuire un oeuf pour qu’il soit dur (10 minutes de cuisson). Décortiquer et récupérer le jaune. Peser 10g de celui-ci et l’émietter.
Mettre le sucre glace, le beurre et le jaune cuit en poudre dans le bol d’un robot.
Commencer à mélanger avec la feuille (le K du kitchenaid ou du kenwood) pour obtenir une crème.
Ajouter la farine mélangée à la maïzena en une seule fois.
Et remettre en marche juste le temps d’incorporer la farine mais sans insister…! On ne doit pas mélanger plus que cela. Sinon les sablés seraient durs après cuisson.
Mettre la pâte sur un papier sulfurisé.
Et mettre une deuxième feuille sur la pâte. De cette façon on peut étaler la pâte sans salir la cuisine ni le rouleau. On doit étaler la pâte assez finement, environ 3mm.
Mettre la pâte étalée entre les deux feuilles au frais pour pouvoir ensuite décoller celles-ci comme des décalcomanies. Avec un emporte pièce, réaliser des petits gâteaux.
Les mettre sur une plaque garnie de papier sulfurisé. Mettre la plaque au frais le temps de préchauffer le four à 180°C.
En fonction de la puissance du four de chacun, cuire entre 15 et 25 minutes, les sablés doivent être bien dorés. Laisser ensuite refroidir sur une grille à pâtisserie.
