Depuis quelque temps je voue une véritable passion pour les biscuits secs. Cela m’étonne toujours de voir qu’avec la simple variation sucre/farine/beurre dans des proportions multiples, on puisse obtenir une infinité de gâteaux. Je m’amuse donc à varier les quantités et à ajouter des éléments plus inattendus. Et quand le résultat est la hauteur de mes espérances, je le publie ici. Croyez moi quand je dis que ces petits sablés sont presque feuilletés avec une saveur moyen-orientale! Mais il faut absolument ne pas oublier de ne pas travailler la pâte une fois la farine ajoutée au risque d’avoir des gâteaux trop durs! En respectant cette méthode vous serez réellement surpris!
Mettre tous les ingrédients sauf la farine dans un bol.
Mélanger les ingrédients de façon à obtenir une crème onctueuse.
Ajouter la farine en une seule fois.
Mélanger juste assez pour incorporer la farine mais pas plus. Ramener la pâte en boule et la placer sur un papier sulfurisé. L’aplatir légèrement avec la paume de la main.
Mettre une deuxième feuille de papier sulfurisé et l’aplatir au rouleau à pâtisserie sur une épaisseur d’un centimètre.
Laisser reposer au frais pour au moins 30 minutes.Préchauffer le four à 180°C.Détailler des biscuits à l’emporte pièce ou au couteau de la forme souhaitée.
Mettre les sablés sur une plaque garnie de papier sulfurisé.
Cuire 18 minutes en surveillant le four. Laisser ensuite refroidir sur une plaque à pâtisserie.
