J’ai souvent au frais, du riz cuit dans une boite hermétique. J’adore le riz blanc avec juste un trait de sauce soja, de l’huile de sésame et un peu de piment. Il m’en restait une belle quantité et j’ai du coup eu envie de faire un riz sauté très simple, sans trop de fioriture. Simple, efficace et bon ! Tous les ingrédients sont faciles à trouver, ou sont même déjà chez vous. Vous pourrez à loisir, ajouter ce que vous aimez (viande, herbes aromatiques, fruits secs).
Faites cuire le riz la veille. Pour cela je pèse en gros 250g de riz basmati. Je le rince à l’eau claire puis je le mets dans le rice cooker avec 310ml d’eau. Quand il est cuit, je le verse tout de suite dans un plat pour le laisser refroidir, puis je le conserve au réfrigérateur dans une boite hermétique. De cette façon, les grains de riz se détachent parfaitement pour une deuxième cuisson (dans le wok ou la poêle).
Préparez tous les ingrédients : épluchez l’ail, la carotte et le demi oignon. Coupez en petits morceaux.
Versez 2-3 cuillerées à soupe d’huile dans un wok ou une large poêle. Cassez-y les œufs sur feu assez soutenu.
Mélangez succinctement et laissez cuire.
Retournez pour cuire l’autre côté et colorer légèrement.
Versez l’omelette frite dans un plat puis rajoutez de l’huile dans le wok (ou poêle). Mettez au moins bien 4 cuillerées à soupe d’huile. Ajoutez les petits pois, la carotte et l’oignon, ainsi que les gousses d’ail hachées.
Laissez cuire sur feu fort.
Quand l’oignon et la carotte ont un air cuit, ajoutez le riz cuit.
Mélangez bien puis versez le curry, puis salez et poivrez à votre goût.
Versez l’omelette coupée en morceaux.
Les raisins.
Mélangez une dernière fois, goûtez pour ajuster l’assaisonnement.
Servez bien chaud en ajustant aux ingrédients que vous aimez (coriandre, noix de cajou etc.).
