Vous trouverez aisément un paquet de riz gluant dans n’importe quelle épicerie asiatique. Voici une photo mais le nom est écrit en énorme sur le paquet, difficile de se tromper!! De près il a une apparence presque poudreuse par rapport au riz traditionnel.
Pour préparer le riz gluant, il faut tout d’abord le laisser tremper au moins une nuit dans un grand récipient d’eau froide. Le lendemain, bien égoutter le riz puis le mettre idéalement dans un panier spécialement conçu pour ce riz. Ceci est un panier en osier en forme de chapeau vietnamien inversé. Il coute 2 ou 3 euros chez Tang frères. On peut sans doute en trouver de semblables dans toutes les épiceries asiatiques. Il existe aussi de plus petits paniers qui se ferment comme une boîte. Si bien sûr rien de tout cela n’est trouvable dans le quartier, alors on peut aussi le mettre dans un cuit vapeur. L’avantage avec le panier en osier, est qu’il va transmettre au riz un petit goût qui est très subtil et délicieux. Très authentique! Sur la photo suivante, on peut voir le panier qui se trouve sur une marmite . Le bas du panier ne touche pas le fond de la marmite dans lequel se trouve assez d’eau pour bouillir. L’eau ne doit bien sûr pas toucher le riz !! Le riz est simplement placé dans le panier, le couvercle de la marmite sur le panier.
Il ne reste plus qu’à cuire le riz à la vapeur, couvercle fermé. Au bout de vingt minutes, il faut prendre le panier et le secouer pour former une boule de riz, on replace ensuite le couvercle pour poursuivre la cuisson. Le riz est cuit après 20-25 minutes supplémentaires. La cuisson dure donc au total presque 45 minutes. Cela dépend de la quantité de riz. Il faut savoir en outre que le riz gluant ne gonfle presque pas.
Le riz gluant est délicieux avec toutes sortes de repas asiatiques. Ou simplement avec de la sauce de soja et un peu d’huile pimentée au sésame!
