La pâte de pistaches est comme la pâte de noisettes et le praliné, une base culinaire en pâtisserie. Elle est un peu plus longue à réaliser que les autres, surtout le broyage qui dure presque 30 minutes. Mais le résulat est à la hauteur de la peine que l’on se donne. Avec cette pâte nous allons pouvoir réaliser la mousseline pistache, des macarons, des crèmes brûlées, des financiers etc…
Commencer par griller les pistaches sur une plaque à pâtisserie pendant 15 minutes à 150°C.
Une fois les pistaches grillées, les placer dans un bol.
Chauffer le sucre sur feu doux avec l’eau.
Quand le sirop est à 121°C le verser directement sur les pistaches grillées.
Bien mélanger pour bien envelopper toutes les pistaches de sirop.
Le sucre va cristalliser, c’est tout à fait normal!
Une fois les pistaches refroidies, les mettre dans le bol du mixeur avec la cuillerée d’huile, 4 gouttes d’extrait d’amandes amères et la poudre d’amande.
Mettre en marche. L’opération va être assez longue pour obtenir une consistance de pâte, mais ça marche toujours. Donc patience!! Il vaut mieux arrêter l’appareil de temps en temps pour éviter de le surchauffer! Voici les photos des différentes étapes par lesquelles passent les pistaches!
Une fois que la pâte est prête, la mettre en boite hermétique puis au frais. La pâte se conserve assez longtemps. De toute façon on le voit bien à l’odeur et la couleur.
