Les « Patacones » (pataconesse) sont des bananes frites d’une certaine façon (aplaties), de Colombie! J’ai cette recette d’une de mes très bonnes amies, Diana, que je tiens à remercier pour m’avoir montré en direct comment procéder et de m’avoir donné au passage ses astuces de famille! Les patacones sont délicieux tels quels ou alors accompagnent à merveille les plats colombiens! C’est délicieusement croustillant!!
Voici les bananes vertes que l’on doit se procurer! Pour les novices de cette banane, elle n’a rien à voir avec la banane jaune classique! La texture est un peu rèche et collante.
Couper les extrémités de chaque banane et inciser la surface de la peau sur la longueur.
Couper des tranches de 2 centimètres de largeur.
Et mettre les morceaux dans une casserole remplie d’eau et de quelques gousses d’ail écrasées (2 ou 3).
Dans une large poêle ou une friteuse (ou encore un wok!), chauffer une bonne quantité d’huile. Quand l’huile est bien chaude, mettre les morceaux de bananes (en deux ou trois fois, tout dépend de la quantité à frire!).
Les retourner de temps en temps. Les babanes qui ont une couleur rose pâle, vont devenir jaunes. Les laisser frire 1 minute quand elles ont cette couleur.
Laisser refroidir sur un papier absorbant.
Quand les moceaux de bananes sont manipulables, prendre un sac plastique (pas ceux qui font du bruit, mais plutôt style sac fnac!) et mettre un morceau posé sur sa tranche dans le sac plastique. Avec la planche à découper, écraser fermement.
On obtient alors un patacón tout plat!
Procéder de la même manière pour tous les morceaux.
Remettre l’huile à chauffer et frire de nouveau les patacones pendant 5 minutes en retournant à mi-cuisson.
Mettre à égoutter à la sortie du bain d’huile sur un plat garni de papier absorbant.
Saler comme pour des frites et déguster quand c’est bien chaud!Merci Diana!!!
