Voici un plat que beaucoup de monde a peur d’essayer. Peu de le rater sans doute car la cuisson est assez précise. Mais rien de bien compliqué cependant et surtout le résultat est tellement délicieux, que l’on aurait bien tord de s’en priver! Je vous donne la technique de ces oeufs juste cuits, avec un jaune fondant se mélangeant à la crème fraîche parfumée. Une recette de base que l’on peut adapter avec beaucoup de choses.
Préchauffer le four à 190°C.Au bout de ce temps, la crème s’est un peu épaissie. La verser dans quatre ramequins individuels en portions égales. Placer les ramequins dans un plat allant au four.
Casser un oeuf dans chaque ramequin.
Ajouter de l’eau bouillante dans le plat jusqu’au trois quarts de la hauteur des ramequins. Ajouter une petite noix de beurre salé à côté du jaune, poivrer légèrement.
Laisser cuire au four à 190°C pendant 8 minutes en surveillant. Si l’oeuf manque un peu de cuisson, cuire par tranches d’une minute en vérifiant. La crème reste liquide, le jaune aussi. Il n’y a normalement que le blanc qui est cuit!
Ajouter un peu de fleur de sel et de ciboulettes hachées.
