Il n’y pas vraiment de recette à proprement parler de la soupe miso, ce délicieux bouillon japonais. Mais plutôt une idée des ingrédients utilisés et surtout la proportion, car on peut vite se sentir perdu avec les ingrédients qui n’ont pas d’explication. Mais aussi surtout, on peut être indécis quant à la pâte achetée. Il n’y aucune manipulation et la soupe est prête le temps de faire bouillir de l’eau… La soupe miso est l’un des éléments les plus consommés au Japon. Impossible d’imaginer un repas sans elle. Il y a des variantes régionales ou saisonnières mais je vous donne ici une version de base telle qu’on la rencontre partout au Pays du Soleil Levant!
Voici l’un des paquets qui existent dans les supermarchés japonais (Hi-Mart rue Sainte Anne). Il s’agit tout simplement de pâte de soja fermenté.
L’autre ingrédient indispensable est le dashi en poudre. Il existe des boites avec des sachets de 5g ou de 10g. 10g conviennent pour un litre de bouillon et 5g donc pour deux personnes, 500ml.
Le troisième élément presque systématique de la soupe miso mais non indispensable est le tofu mou.
Mettre le dashi dans la casserole.
Verser l’eau et ajouter les cuillerées de pâte de miso. On peut en mettre plus ou moins mais cette quantité que je donne ici convient parfaitement. Mais après tout, chacun son goût.
Couper la ciboule en petits morceaux et le tofu en cubes.
Mettre la partie verte de la ciboule et le tofu dans les bols.
Et la partie blanche (qui peut cuire un peu plus) dans la casserole. Il ne reste plus qu’à verser la soupe frémissante dans les bols…
