Voici une recette que je fais souvent depuis qu'une très bonne amie de Pau (Christine!) me l'avait préparée il y a quelques années. Un délicieux magret de canard parfaitement cuit, avec des tranches de mangue cuite dans la graisse du canard. Le tout est nappé d'une sauce caramélisée au vinaigre balsamique, au miel et au Grand marnier flambée. Une petite merveille que les invités apprécient toujours! Je vous propose une méthode pour pré-cuire vos magrets avant le diner (dans l'après midi) et éviter ainsi d'avoir l'odeur de gras pendant le repas. Le résultat est fantastique et le canard reste bien rosé à souhait.
Mettre les magrets côté peau dans un poêle bien chaude.
Laisser cuire pour obtenir une belle peau bien dorée. Les retourner pour les faire cuire 2 minutes côté chair.
Le canard va ainsi cuire parfaitement et cette opération sera déjà faite!
Mettre les magrets dans un plat qui ira au four. Laisser refroidir, puis stocker au frais jusqu’au soir. Garder le gras de la poêle!!
Le diner venu, refaire chauffer la poêle avec l’équivalent de deux cuillerées à soupe de graisse des magrets. Mettre les mangues (décongelées!) à cuire sur feu assez fort. Les saler et les poivrer. Parallèlement, mettre les magrets à four chaud (200°C) pendant 15 minutes.
Quand les mangues commencent à dorer, les retourner pour cuire l’autre face.
Quand les mangues sont cuites, les enlever de la poêle (dans une assiette que l’on couvrira de papier d’aluminium), ajouter le vinaigre balsamique dans le gras et le jus de mangue de la poêle.
Ajouter le miel.
Puis le Grand Marnier que l’on fait flamber.
Laisser cuire 2 ou 3 minutes.
Sortir le canard du four, puis le couper en tranches.
La cuisson reste parfaite même après son passage au four!
Mettre deux mangues dans une assiette chaude avec la moitié d’un magret tranché par personne. Verser le caramel sur la viande et les mangues. Servir immédiatement.
