Macarons Moelleux des Baronnies Provençales au Miel
La semaine dernière, je suis passé par Odéon et le Cours du Commerce Saint André où se trouve une bien belle boutique: Première Pression Provence où l’on trouve de merveilleuses huiles d’olive. Il y en a plusieurs à Paris. Et dans la boutique, il y avait ces petits macarons moelleux des Baronnies au miel. Une petite bombe que j’ai tout de suite adorée. J’y suis retourné pour en acheter et là: le drame ! Ils ne les vendent plus… Je me suis donc installé en cuisine pour les cloner et craquer leur recette secrète. Cela n’a pas été bien difficile. Les avantages de cette recette? Elle est simple, rapide à préparer: pas de poche à douille ni de macaronage. Il faut savoir qu’il existe une multitude de macarons. En gros, dès qu’il y a des amandes, du sucre et du blanc d’œuf, c’est un macaron. Ici en plus, on met la pâte dans un moule. En 20 minutes ils sont prêt et ils seront parfaits pour le café, le thé ou avec une glace. Résultat? Des petits macrons croustillants à l’extérieur et tout moelleux à l’intérieur. Allez hop, en cuisine !
Préchauffer le four à 180°C.Mettre la poudre d’amandes et le sucre dans un récipient.
Bien mélanger puis ajouter le miel, le blanc d’œuf et la vanille liquide.
Bien mélanger pour obtenir une pâte homogène. C’est tout !
Dans un moule à mini tartelettes en silicone (ce moule est le plus facile à trouver), vaporiser un peu de bombe à démoulage (je fais toujours cela) puis déposer dans chaque emplacement une boulette de 15g.
Aplatir avec la main pour prendre la forme du moule.
Mettre au four à 180°C pendant 20 minutes.
Les macarons doivent être bien dorés.
Laisser reposer dans le moule pendant 5 minutes puis démouler précautionneusement sur une grille.
Les remettre à l’endroit puis laisser complètement refroidir.
Ils se conserveront près d’un mois dans une petite boîte bien hermétique.
