Une nouvelle recette de macarons sur mon blog. Cette fois je vous donne ma recette de macarons au praliné. Une valeur sûre pour cette saveur classique et néanmoins délicieuse. Les coques avec des noisettes grillées et croquantes, laissent découvrir une intérieur moelleux et riche composé d’un praliné maison. On peut ajouter des noisettes en poudre dans l’appareil à macarons à hauteur de 50%, mais je préfère garder cette option pour une prochaine recette au gianduja!
Réaliser une recette de macarons natures. La recette est ici!
Écraser quelques noisettes avec le fond d’une casserole.
Parsemer la moitié des macarons avec des noisettes.
Cuire comme à l’habitude en suivant la recette adaptée à votre four.
Préparation de la crème au beurre praliné: Le beurre doit être à température ambiante.
Mélanger au fouet électrique ou au robot muni de son fouet.
Au bout de trois ou quatre minutes, ajouter le praliné maison (recette ici!) . On peut mettre dans le praliné, moitié noisettes et moitié amandes, ou bien que l’un ou l’autre.
Bien mélanger et ajouter la vanille en poudre.
Préparer une meringue italienne avec la même méthode que pour la meringue italienne des macarons, mais avec 60g de sucre et 20g de blancs. Il faut par contre laisser refroidir complètement la meringue avant de l’incorporer au beurre/praliné, auquel cas, le beurre fonderait!!
Mélanger en soulevant le tout pour ne pas faire retomber la meringue italienne, exactement comme pour une mousse.
Garnir les coques de macarons, et les coller deux à deux avec l’une des coques qui aura des noisettes.
Conserver en boite hermétique une nuit avant de dévorer!
