Le grand classique que tout le monde aime, le favori des macarons! C’est vrai qu’avec son coeur moelleux de caramel tendre relevé par le goût du beurre salé qui excite les papilles, ce macaron est une vraie réussite!
Commencer par une recette de macarons en mettant au moment de la meringue italienne, un colorant brun café pour obtenir une belle couleur caramel! La pointe d’un couteau suffit, mais c’est au bon-vouloir de chacun. Voici en photos un petit rappel des étapes! Cuire comme indiqué, 14 minutes à 145°C ou en fonction de la puissance du four utilisé!
Garniture: Mettre le sucre et le sirop de glucose dans une casserole sur feu modéré avec un trait d’eau.
Obtenir un caramel assez soutenu car la crème et le beurre vont l’éclaircir. Faire chauffer la crème au micro-ondes, pour éviter les projections (la crème froide rendrait le caramel fou!). Ajouter la crème doucement en ne cessant jamais de remuer.
Faire recuire la crème pour faire fondre tout le sucre.
Verser le caramel ainsi obtenu dans un bol et laisser refroidir.
Ajouter 70g (sur les 170g) de beurre salé en pommade. Bien mélanger et laisser reposer. Si par malheur le caramel cristallise (cela m’est déjà arrivé!), le remettre au micro-ondes une minute ou deux pour le refondre. Bien mélanger pour incorporer le beurre.
Mettre les 100g restants de beurre et le fouetter au batteur électrique pour l’aérer.
Ajouter deux cuillerées à soupe de caramel au fouet, puis le reste à la cuiller.
Placer la garniture caramel dans une poche avec une douille de 8mm. Classer les macarons par taille et les choisir pour que deux coques correspondent! Pas besoin de cela si ils sont identiques bien sûr! Garnir une coque sur deux et refermer le macaron.
Stocker les macarons dans une boite et laisser au frais pendant une nuit ou deux pour créer l’osmose avec le macaron qui va capter l’humidité ambiante et gagner tout son moelleux!
