Lors d’un de mes voyages à Bangkok j’ai appris à cuisiner cette délicieuse entrée. Une galette de riz passée à la friture, donc bien croustillante, surmontée d’une garniture qui rappelle beaucoup la sauce satay, mais avec des crevettes et du porc dedans. Le contraste entre le croustillant du riz et l’onctuosité de cette sauce, sucrée et pimentée, est réellement réussi! A essayer d’urgence.Pour trouver les galettes de riz, rendez-vous dans le 13ème arrondissement de Paris. J’ai eu du mal à les trouver chez Tang, mais sans souci chez Paris Store! Voilà pour l’info!! Pour ceux qui se demandent à quoi peut bien ressembler une racine de coriandre, et bien voilà:
Commencer par broyer les cacahuètes.
Ecraser au mortier le poivre, la racine de coriandre et l’ail jusqu’à obtenir une pâte.
Ajouter cette pâte aux crevettes et au porc et bien mélanger.
Dans une casserole, faire bouillir la crème de coco sur feu doux.
Ajouter la mixture de crevettes/porc, bien mélanger puis ajouter le sucre, le nuoc nam et la pulpe de tamarin.
Laisser bouillir jusqu’à ce que la sauce épaississe, puis ajouter la pâte de curry rouge.
Ajouter les cacahuètes et laisser cuire jusqu’à l’obtention d’une sauce assez épaisse. Enlever du feu.
Dans un wok ou une casserole, chauffer de l’huile.
Quand celle-ci est bien chaude ( on peut voir cela en plongeant une baguette chinoise dans l’huile, quand des bulles apparaissent sur le bout de la baguette, l’huile est chaude!),
faire frire les galettes pendant une minute, ou jusqu’à ce qu’elles soient dorées.
Disposer les galettes sur une assiette,
déposer sur le dessus d’une bonne cuillerée de sauce
puis finir avec une feuille de coriandre et d’une fine tranche de piment jalapeno.
