Haricots blancs marocains, tomates, coriandre et persil
Une petite recette sans prétention et surtout très saine, mais néanmoins délicieuse. J’ai fait ces haricots à Rabat avec mon amie Touria, grâce à la recette de Kenza. Ces haricots savoureux seront parfaits pour accompagner un plat. Il faudra juste penser à les mettre à tremper la veille. C’est une recette simple, de haricots que l’on mange en famille au Maroc. On trouvera évidemment des variantes familiales ou régionales. On doit d’ailleurs aussi les faire d’une façon presque identique dans le reste du Maghreb, alors n’hésitez pas à mettre en commentaires vos petites touches personnelles !
Le lendemain, égouttez-les, passez-les sous l’eau froide et laissez ensuite bien égoutter de nouveau. Lavez également la coriandre et le persil plat.
Épluchez et coupes finement l’oignon rouge.
Épluchez les tomates et coupez en morceaux.
Versez 4 cuillerées à soupe d’huile d’olive dans une cocotte.
Laissez cuire 3-4 minutes
Ajoutez les tomates et l’ail finement haché.
Laissez cuire en remuant de temps en temps pour que le jus des tomates s’évapore.
Le tout doit compoter. Vous pouvez, si vous le souhaitez, ajouter une cuillerée à soupe de double concentré de tomate.
Hachez finement les herbes.
Versez-les dans la cocotte, avec les haricots blancs. Versez de l’eau jusqu’à 3cm au dessus des haricots. Salez à votre goût.
Ajoutez les feuilles de laurier. Fermez la cocotte et portez à ébullition. Quand la vapeur sort sous pression, comptez 30 minutes de cuisson. Sans cocotte minute, fermez avec le couvercle de votre casserole et faites cuire une bonne heure.
Les haricots sont presque prêts.
Laissez cuire maintenant sans couvercle jusqu’à la consistance désirée. Vous pouvez avoir une sauce plus liquide, ou au contraire, plus onctueuse.
