Oubliez les gnocchis industriels (qui peuvent être très bons!), ces gnocchis frais réalisés « maison » fondent dans la bouche… Un goût subtil, velouté, « rond »! C’est comme du velours! Une petite merveille simple à réaliser. Je vous donne une petite astuce pour les préparer à l’avance et également une recette de gnocchis à la crème douce et onctueuse à l’ail et au parmesan. J’ai cherché le pluriel de gnocchi (qui est déjà un pluriel en italien) et on ajoute bien un « s » en français, donc gnocchis.
Ajouter les deux cuillerées à soupe d’huile d’olive.
Puis l’oeuf et le jaune.
Ajouter la farine en pluie.
Bien mélanger. La pâte est assez collante mais c’est tout à fait normal. Plus on ajoute de farine, plus la pâte sera ferme mais absolument moins bonne après cuisson!
Fariner le plan de travail, prendre un quart de la pâte et bien l’enrober de farine.
Rouler la pâte en boudin de 2 centimètres de diamètre.
Couper des morceaux au couteau.
Rouler en boule puis rouler sur la planche à gnocchis ou avec une fourchette.
Pour obtenir un petit gnocchi.
Faire de même avec toute la pâte.
Cuire dans une grande casserole d’eau bouillante salée. Dès qu’ils remontent à la surface, les sortir de l’eau.Conseil de Bernard: Je cuis mes gnocchis à l’avance par petites quantités et dès qu’ils remontent à la surface, je les mets dans de l’eau froide pour arrêter la cuisson puis je prépare ensuite la sauce à part dans laquelle je les rajoute à la dernière minute. Cela peut s’avérer intéressant lors d’un diner avec des invités!
Je donne ici une recette réalisée « au nez » et qui s’est avérée excellente et a remporté tous les succés. Pas de photo!–les gnocchis ci-dessus-2 cuillerées d’huile d’olive-4 gousses d’ail hachée finement-250g de crème fraiche épaisse-30g de parmesan fraichement râpé-2 cubes « maggi »-poivre noir, noix de muscadePréparer les gnocchis et les cuire, puis les plonger dans l’eau froide et réserver.Chauffer l’huile d’olive dans une poêle et ajouter l’ail haché. Dès qu’il se colore, ajouter la crème, les cubes « maggi ». Râper le parmesan et laisser épaissir. Poivrer, ajouter la noix de muscade et dès que la sauce est agréable et délicieuse (!!), ajouter les gnocchis. Laisser cuire 3 minutes et servir immédiatement!
