Le gâteau breton est, comme on s’en doute, composé de beurre salé! Il se garde assez longtemps. L’histoire de ce gâteau est assez floue, mais des livres de cuisine en parlent à partir de la seconde moitié du 19ème siècle. Dans tous les cas, sa confection est simple et régalera tout le monde!
Préchauffer le four à 220°C.Mélanger les jaunes et le sucre sans les blanchir dans une jatte.
Ajouter le beurre pommade et bien l’incorporer. On obtient un mélange crémeux.
Ajouter la farine avec la pointe de couteau de levure chimique (c’est vraiment une quantité infime de levure qui évitera au gâteau d’être un bloc compacte!!).
Beurrer et fariner un moule à manqué (à bord amovible) de 22cm de diamètre. Mettre la pâte dans le moule à la main et l’enduire de jaune d’oeuf au pinceau. On ensuite passer un coup de pinceau trempé dans du lait pour diluer légérement le jaune. Faire ensuite des croisillons avec une fourchette.
Mettre au four à 220°C pour 20 minutes, puis baisser le four à 180°C pour 35 autres minutes. Dès la sortie du four, démouler et laisser refroidir sur une grille.
Il faut savoir qu’en Bretagne, le gâteau breton se mange découpé en losanges!!
