Il y a des jours où je m’arrache les cheveux pour faire des photos. Il faut savoir que je ne suis pas friand des photos culinaires. Je préfère mille fois arpenter des marchés et prendre des moments sur le vif. D’ailleurs pour me simplifier la vie et réduire le stylisme culinaire à son plus strict minimum, j’ai choisi le fond blanc. On va direct à l’essentiel et je ne me pose pas la question de savoir quel plat je vais utiliser. Mais parfois cela devient difficile ! Comme avec ce gaspacho menthe-avocat. Croyez moi quand je vous dis qu’il est absolument délicieux et très rafraichissant. Avec sa texture particulière et ses petits morceaux de légumes pas totalement réduits en purée, on a l’impression d’une soupe de taboulé. Mais alors à prendre en photo, quelle angoisse !! Cela ne rend pas justice… Je fais souvent à la maison ce gaspacho très original quand il fait chaud, cela donne une bonne dose de légumes bons pour la santé ! Et surtout il est très rapide à préparer.Si vous aimez les soupes froides, allez vite voir mes recettes de gaspacho classique, de salmorejo et de soupe froide de courgettes !Pour cette recette je tiens à remercier Peter (que je vous avais présenté avec sa fabuleuse recette de daube) qui nous avait servi un gaspacho à la texture similaire. J’ai simplement mis plus de concombre et de tomates par rapport à sa version.
Voici presque tous les ingrédients de ce gaspacho très frais !
Enlevez tout d’abord le pédoncule des tomates. Lavez-les soigneusement et épluchez l’ail et l’échalote.
Mettez dans le mixeur la moitié de la menthe et de la coriandre, un petit concombre (sur les 3) non épluché mais dont vous aurez ôté les extrémités.
Mixez le plus finement possible.
Versez ce que vous venez de faire dans un récipient. Maintenant, vous allez mixer moins finement le reste des éléments. Pour éviter de saturer le mixeur, allez-y progressivement avec d’abord par exemple un concombre, l’ail et l’échalote.
Mixez par impulsions successives pour finalement « hacher » en très petits morceaux et non en purée. Versez dans le récipient.
Mixez ensuite le dernier concombre avec une tomate et un peu de menthe et de coriandre. Faites de même avec ce qu’il reste de tomates.
À chaque fois, versez le résultat dans le récipient.
Pareil pour l’avocat. Il faut qu’il soit mûr mais pas trop mou.
Mettez la chair dans le mixeur avec le jus de citron et le vinaigre.
Hop dans le récipient.
Mélangez soigneusement, salez, poivrez.
Ajoutez l’huile d’olive.
Mélangez une dernière fois puis laissez reposer au réfrigérateur au moins 4 heures avant de le servir.
Profitez-en par une belle journée chaude et ensoleillée !
