Avec le voyage culinaire de Lausanne, il me fallait bien mettre une recette de fondue suisse. Je vous donne ici une recette globale, sachant que vous pourrez choisir quel type de fromage ajouter dans cette recette. Vous aurez donc la possibilité de faire une fondue Vaudoise, une fondue Fribourgeoise, la fondue Moitié-Moitié, Neuchâteloise ou encore de Suisse Centrale. Voici les principales fondues Suisses :Fondue Vaudoise: 100% gruyère Fondue Fribourgeoise: 100% vacherin fribourgeois Fondue Moitié-moitié: 50% gruyère 50% vacherin fribourgeoisFondue Neuchâteloise: 50% gruyère 50% emmental Fondue Suisse Centrale: 1/3 gruyère 1/3 emmental 1/3 Sbrinz
Préparer les fromages et les peser sans les croûtes. Le soir où j’ai fait ma fondue, j’avais du gruyère et du vacherin fribourgeois, c’était donc une fondue moitié-moitié…
Éplucher la gousse d’ail et frotter celle-ci dans le fond et sur la paroi du caquelon.
Dissoudre la maïzena (ou la fécule de pomme de terre) dans un peu de vin blanc prélevé dans les 350ml.
Râper le fromage et le mettre dans un caquelon (je n’en avais pas sous la main, mais je l’ai fait dans une casserole en cuivre à fond épais!). sur feu doux, ajouter tout de suite le vin blanc sec.
Verser la fécule liquide dans le caquelon.
Laisser et ajouter le jus de citron (l’équivalent d’une cuillerée à soupe) ou bien une bonne pointe de couteau de crème de tartre. Conseil de Bernard: Le citron ou la crème de tartre sont acides et permettent d’émulsionner la fondue. Concrètement, les corps gras du fromage (et il y en a beaucoup!!) n’ont pas tellement envie de se mélanger au vin blanc (eau+alcool). Le fait d’ajouter cette acidité va créer une réaction permettant d’obtenir une fondue parfaitement homogène! Et il n’y aura pas de goût citronné!
Poivrer et râper la noix de muscade. Surtout ne pas saler!
Cuire toujours sur feu doux à modéré en tournant avec une cuiller en bois.
Quand la fondue est…fondue, ajouter le kirsch (toujours pas le fantaisie!!).
Tout en mélangeant constamment, laisser cuire et bouillir. La fondue devient crémeuse à souhait! Plus on laisse bouillir, plus elle devient onctueuse. Donc il faut ajuster en fonction de ce que l’on aime!
Servir immédiatement en positionnant le caquelon sur une flamme pour le tenir au chaud. Tremper des morceaux de pain de la veille (qui ne se dissoudra donc pas tout de suite dans la fondue chaude).
