J’ai été assez surpris par le nombre de demandes de la recette du far breton! Je profite donc de mes vacances dans la maison familiale et de son air marin pour la confectionner! La voilà donc, mais je donne ici la recette de base. La recette originale ne comporte ni pruneaux ni raisins! Mais on peut bien sûr les ajouter à cette recette. On peut aussi le réaliser de l’épaisseur désirée et surtout le faire flamber au grand marnier à la sortie du four! Mais sachez qu’un far est rarement épais et fait entre un et deux centimètres.
Préchauffer le four à 160°C.Mettre le sucre et les œufs entiers dans une jatte. Les mélanger au fouet.
Ajouter la moitié de la farine et bien mélanger pour éviter les grumeaux.
Ajouter un tiers environ du lait et continuer de bien mélanger.
Ajouter le reste de la farine…
Puis après mélange, le reste du lait. En procédant de cette façon, on évite complétement les grumeaux! On obtient en fait une sorte de pâte à crêpes.
Mettre environ un tiers des 50g de beurre salé dans un plat en terre cuite.
Et l’étaler avec un papier absorbant ou à la main!
Verser la pâte dans le plat. La hauteur du far cuit est la même que la celle de la pâte versée. Il faut moins de deux centimètres! On peut à ce stade ajouter les pruneaux ou les raisins marinés dans du rhum dans le plat!
Ajouter le reste du beurre salé coupé en fines lamelles sur la surface de la pâte…
Mettre au four pour environ une heure!
Il faut surveiller le far pour éviter qu’il ne brûle. Il doit être pris, donc bien cuit à la sortie du four.
Il est à ce stade assez gonflé. Un far peut gonfler de manière impressionnante selon l’épaisseur qu’il a!On peut voir ensuite qu’il prend son épaisseur définitive en refroidissant!
