Cette épaule d’agneau très tendre est accompagnée d’une sauce onctueuse au mascarpone et aux gousses d’ail confites au romarin frais. On peut la servir avec des pommes de terre, soit cuites dans le même plat, soit à part, sautées avec de l’ail frais et des herbes fraiches.
Commencer par piquer la viande sur toute sa surface avec un couteau.
Dans un petit mixeur, mettre les feuilles de 2 ou 3 branches de romarin (passées à l’eau), du sel et une bonne cuillerée à soupe d’huile d’olive.
Masser la viande avec cette préparation pour que toute la viande et les trous soient couverts de cette « sauce ».
Mettre l’épaule (j’ai mis les os sous la viande pour qu’ils prourent plus de goût) dans un plat allant au four avec les gousses d’une tête d’ail, avec leurs peaux. Récupérer les feuilles d’une autre branche de romarin et disperser dans le plat.
Couper juste le dessus de la deuxième tête d’ail. Mettre la deuxième tête d’ail entière dans un papier d’aluminium avec des feuilles de romarin (toujours lavées), une cuillerée à soupe d’huile d’olive et du sel. Fermer en papillote.
Placer cette papillote dans le plat.
Mettre au four à 160°C pendant 1h30. Si l’on souhaite ajouter des pommes de terre, on peut les mettre au bout de cette heure et demie dans le plat (épluchées et coupées en morceaux).Sinon on peut cuire les pommes de terre à part dans un grand wok (je trouve cela plus pratique car les woks ont une grande capacité et on peut faire rissoler 2kg d’un coup!) avec de l’huile d’olive, du sel. Je les mets crues et je les fais sauter directement, d’abord avec un couvercle puis sans en remuant réguliérement. On peut ajouter une gousse d’ail écrasée et quelques feuilles de romarins et une ou deux échalottes.
Augmenter ensuite le four à 180°C puis cuire de nouveau une heure à une heure trente.
Juste avant de servir, enlver la papillote du plat.
Récupérer la chaire de cette tête d’ail (donc sans peau) avec les feuilles de romarin et mettre dans une casserole.
Ajouter les 250g de mascarpone et chauffer sur feu doux.
Dès que la crème bout, arrêter le feu, et servir sur la viande avec les pommes de terres.
