Voici une recette italienne, très très simple à réaliser. Littéralement « brutti ma buoni », signifie « moches mais bons »! Et c’est vraiment le cas. Mais je trouve finalement une esthétique dans cette forme brute, presque minérale. Il y a ici trois ingrédients: sucre, noisettes et blancs d’oeuf. La texture? Craquante sur le dessus et moelleuse à l’intérieur. À déguster avec un espresso bien serré!
Quand les blancs commencent à bien monter, ajouter progressivement le sucre en poudre. Continuer de fouetter jusqu’à parfaite incorporation du sucre. On obtient une sorte de meringue molle.
Mélanger les noisettes hachées et en poudre.
Puis verser dans la meringue.
Mélanger en soulevant le tout pour éviter de faire retomber les blancs.
Mettre la pâte dans une casserole sur feu doux à moyen.
Tout en mélangeant constamment avec une cuiller, cuire pendant dix à quinze minutes.
La pâte commence alors à se décoller.
Et finit par ne plus coller à la casserole (enfin presque, car c’est quand même du sucre!).
Avec deux cuillères à soupe, former des tas de pâte sur plaque à pâtisserie, garnie de papier sulfurisé.
Cuire à 180°C pendant 15 à 20 minutes.
Puis laisser refroidir sur une grille.
Les « brutti ma buoni » sont bien dorés: craquants dessus et un peu moelleux dedans!
