Les « Baci di dama », ou les « baisers de la dame » sont une spécialité italienne du Piémont. Un biscuit croquant aux amandes et noisettes avec au milieu un fourrage aux noisettes et chocolat, le Gianduja! Une pure merveille, surtout avec un expresso bien serré! J’ai pu goûter ce petit gâteau pour la première fois à Venise près de la place Saint Marc, dans le café Bonifacio (calle dei Albanesi). J’ai ensuite retrouvé sa trace à Turin dans le Piémont. En voici la recette!!
Préchauffer le four à 150°C.Mettre le beurre, le sucre et les poudres d’amande et de noisette dans un bol. Mélanger rapidement.
Ajouter la farine et mélanger pour former une boule de pâte. Ne pas travailler cette pâte trop longtemps car elle risquerait de devenir trop dure en cuisant.
Former des boulettes égales et les placer sur une plaque à pâtisserie garnie de papier sulfurisé. J’ai pesé mes boulettes de façon à ce qu’elles aient toutes le même poids (14g).
Enfourner et laisser cuire 30 minutes. Les laisser ensuite refroidir sur une grille.
Pendant la cuisson des gâteaux, faire fondre le chocolat puis ajouter la pâte de noisettes.
Bien mélanger et laisser refroidir. Ceci n’est autre que du Gianduja.
Quand les gâteaux sont refroidis, les garnir d’une cuillerée à café de gianduja quand celui-ci commence à se raffermir. Attention, le gianduja a une phase de solidification très rapide. En quelques minutes il passe du liquide à une pâte assez dure! Ce que je fais, c’est mettre le gianduja dans une mini poche à douille et dès que je sens que le gianduja est assez malléable, je garnis en vitesse les baci di dama comme des macarons.
A servir avec un café expresso, ou comme je le préfère avec un café latte!!
