Envie d’un gâteau ultra-frais, bien citronné et pas trop sucré? Ce tiramisu au citron, limoncello et lemoncurd est fait pour vous ! J’ai eu peur que ma crème ne soit pas assez sucrée lorsque je l’ai goûtée, mais avec les biscuits et le lemoncurd, c’est un assemblage que j’ai trouvé parfait ! Il faudra le déguster bien froid. Je suis un grand fan de tiramisu. J’adore le classique que j’ai déjà partagé avec vous, mais aussi celui aux cerises amarena. Mais celui-ci est devenu instantanément mon favori !
Préparez tout d’abord le « sirop » pour tremper les biscuits à la cuillère. Versez tous les ingrédients dans une casserole : jus de citron, eau, sucre, le limoncello et le zeste d'un citron non traité. Il y a très peu de sucre et c’est tout à fait volontaire. Faites chauffer pour dissoudre le sucre.
Pour la crème, fouettez les blancs des 4 gros œufs avec le sucre glace en neige très ferme.
Dans un autre récipient, fouettez les 4 jaunes avec le lemoncurd pendant 2 minutes.
Ajoutez le mascarpone, le limoncello et le zeste de deux citrons non traités.
Fouettez pendant 3-4 minutes.
Ajoutez alors les blancs montés en neige progressivement et délicatement dans la crème au mascarpone.
Trempez les biscuits à la cuillère dans le sirop encore chaud.
Ils doivent être bien imbibés. Faites une couche dans le fond du plat.
Ajoutez la moitié de la crème, puis remettez une couche de biscuits imbibés.
Terminez avec le reste de crème.
Lissez bien le dessus de la façon la plus uniforme possible. Laissez 3mm de libre sur le dessus du plat, car il faudra mettre le lemoncurd.
Mettez au frais au moins deux heures. Au bout de ce temps, versez le lemoncurd pour terminer. Si la crème est encore trop molle, n’hésitez pas à passer le tiramisu au congélateur 30 minutes afin de solidifier la couche supérieure de crème avant de verser le lemoncurd, car si la crème est trop molle, il devient difficile d’étaler la couche de lemoncurd.
Remettez au frais encore au moins 3 heures avant de servir bien frais !
