Un délicieux pesto qui change d'un pesto classique à base d'herbe. On s'éloigne de la recette d'origine, mais avec sa composition, j'ai quand même décidé de l'appeler comme ça ! Ici des noix de cajou, du parmesan, une bonne huile d'olive et plein de zeste et de jus de citron bio ! Un délice sur des pâtes, ou même tel quel sur du pain ou des légumes grillés.
Pour avoir un goût délicieux, je fais torréfier des noix de cajou crues dans une poêle (ou un wok) avec un peu d’huile neutre. Comme la noix de cajou est déjà saturée en gras, elle ne peut pas boire l’huile, mais cette dernière permet de griller uniformément les noix. Vous pouvez aussi tout à fait prendre des noix de cajou grillées non salées.
Pour la torréfaction dans un peu d’huile, il faut que les noix soient joliment colorées.
Dès que vous avez une belle couleur ambrée, placez les noix dans une passoire posée dans un récipient. Laissez égoutter et refroidir.
Pour le pesto c’est ensuite une affaire de quelques minutes.
Prenez bien des citrons bios. Lavez-les et prélevez le zeste avec un couteau ou un économe.
Versez tous les ingrédients dans un mixeur. Versez d’abord le jus d’un citron, vous verrez ensuite si il en faut davantage.
Quand le tout est réduit en pâte, c’est terminé.
Versez dans un récipient ou un pot à confiture, puis couvrez d’un peu d’huile d’olive pour éviter l’oxydation en surface. Dégustez avec des pâtes, ou même avec des légumes grillés ou sur un peu de pain (ici mon pain protéiné maison à l’avoine sans gluten !) recette ICI !
