Omelette du curé (cèpes, pommes de terre, foie gras poêlé)
J'ai mangé cette omelette à Périgueux, et je me suis tout de suite dit qu'il allait falloir vous la proposer sur mon site de cuisine. Voici donc l'omelette du Curé, garnie de cèpes et de pommes de terre sautées, surmontée de crème de cèpes et de tranches de foie gras poêlé. Un délice avec un nom inoubliable, surtout en cette saison pour se mettre dans l'ambiance de Noël !
Faites cuire vos pommes de terre à la vapeur puis faites-les sauter à la poêle avec un peu de matière grasse de votre choix. On peut aussi les faire griller un peu à l’air fryer. Pour les cèpes : épluchez et coupez très finement les échalotes, mettez-les dans une poêle avec l’ail finement coupé et épluché, et les cèpes en morceaux. J’ai pris ici des cèpes congelés.
Laissez cuire les cèpes une dizaine de minutes sur feu doux, en remuant régulièrement.
Mettez de côté la moitié des cèpes dans un récipient pour l’omelette.
Dans la moitié restante dans la poêle, ajoutez la crème, du sel et du poivre et une cuillerée à café de fond de volaille en poudre.
Laissez cuire 5 minutes pour épaissir un peu la crème.
Mettez le contenu de la poêle dans un petit mixeur/blender et mixez pour avoir une crème bien lisse.
Pour l’omelette, battez les œufs à la fourchette avec un peu de sel, poivre et de persil plat.
Faites chauffer une grande poêle avec un peu de graisse de canard.
Quand le fond de l’omelette commence à cuire, ajoutez les cèpes (mis de côté) et les pommes de terre sautées.
Refermez l’omelette quand la cuisson vous semble à votre goût.
Faites cuire les tranches de foie gras sans ajout de matière grasse pour les colorer joliment.
Servez l’omelette nappée de sauce aux cèpes et surmontée de foie gras poêlé, avec une salade et sans attendre !
