Cela fait des années que je déguste cette soupe de haricots quand je vais au Brésil (une fois tous les ans ou tous les deux ans). En voici une version très simple à refaire chez soi. Elle est parfaite pour les journées froides qui s'annoncent, ultra réconfortante et riche en goût ! Avec des morceaux de lardons et de saucisse fumé, de l'ail et du paprika fumé, c'est un petit délice simple et peu onéreux.
Sortez les haricots rouges de leur boite, rincez-les, égouttez-les puis placez-les dans une grande casserole avec 2 litres d’eau. Portez à ébullition.
Mixez les haricots rouges quand l’eau bout avec un mixeur plongeant ou au blender.
Enlevez la peau de la saucisse, coupez-la en tranches puis en morceaux.
Placez dans une poêle, l’huile, les lardons, la saucisse, l’oignon épluché et haché, les gousses d’ail épluchées et écrasées au presse-ail, une cuillerée à café de paprika fumé, sel et poivre à votre goût.
Laissez cuire en mélangeant de temps en temps, sur feu modéré. Le gras de la viande doit ressortir. Versez les haricots mixés.
Ajoutez un petit bouquet de ciboulette finement ciselée.
Laissez ensuite mijoter pendant 20 à 30 minutes sur petite ébullition avec deux trois feuilles de laurier. Si la soupe est trop liquide, laissez cuire davantage sans couvercle, si à l’inverse la soupe est trop épaisse, ajoutez de l’eau jusqu’à obtenir la consistance désirée.
