Soy un fanático de los flapjacks y reservo esta receta para los amantes de esta barra de avena, ya que puede parecer sorprendente para los demás. Sugiero esta rica y decadente versión con almendras. Puse un poco en la masa y por encima. Pero también pongo mermelada en el centro para que queden más suaves. No te lo comerás todo tú solo, ¡seguro! Un pequeño cuadrado es todo lo que se necesita para volver a la pista…
Receta para un molde cuadrado de 18 cm
200 g de mantequilla blanda
300 g de mermelada de frambuesa
310g de harina de avena
50g de azúcar
60g de polvo de almendra
Para la parte superior:
100 g de mermelada de frambuesa
100 g de almendras fileteadas
Poner la mantequilla en un cazo a fuego lento para que se derrita.
Mezclar el azúcar y la avena (¡he utilizado avena Quaker!).
Vierta la mezcla en la sartén.
Mezclar, todavía a fuego lento.
Añadir la mermelada y el polvo de almendra.
Mezclar y apartar del fuego.
Verter la mitad en una fuente cuadrada forrada con papel sulfurizado de 18 cm.
Vierta una o dos cucharadas de mermelada de frambuesa y extiéndala uniformemente.
Vierta la segunda mitad y extienda. Hazlo con cuidado, ya que la mermelada debe quedar bien cubierta.
Se puede prescindir de ella, pero a mí me encantan las almendras fileteadas. Mezclar las almendras laminadas y la mermelada en un bol.
Extender por toda la superficie de la masa.
¡Eso es!
Hornear a 170°C durante unos 20 minutos.
Dejar enfriar y cortar en cuadrados. Guárdelos en una caja hermética en un lugar seco.
