Fried rice with chicken, peanuts and coriander

Here is a quick recipe! I made it during a facebook live during the lockdown with what I had on hand. The result is a delight with peanuts, cilantro and moist chicken. Just remember to cook the rice the day before and let it sit in the fridge overnight so that it comes apart nicely. You can adapt with what you have at hand!

Recette RIZ SAUTÉ AU POULET, CACAHUÈTES ET CORIANDRE pour 4 personnes :

• 200g of rice (weighed raw) then rinsed with clear water for 1 minute then cooked with 250g of water
• 1 onion
• 1 carrot
• 125g of edamame or frozen peas
• 3 cloves of garlic
• 2cm of ginger
• 1 large chicken breast
• 2 eggs
• salt, pepper, sugar
• nuoc mam
• 2 good handfuls of unsalted roasted peanuts
• coriander, spring onion
• fried onions

Instructions : 

Peel and slice the onion.

Peel and slice the carrot.

Then in sticks.

Put 4 tablespoons of oil (sunflower or rapeseed oil for cooking) in the wok (or pan), add the onion, the carrot, the edamame (or peas), the garlic crushed with a garlic press and grate the ginger.

Heat over high heat, stirring regularly.

Cut the chicken breast into strips.

When the onion becomes translucent, add the chicken.

Mix it up!

When the chicken is seared, break the eggs in a corner of the wok (here only one, but make sure to use 2).

Break it into the wok (or pan).

Let them cook and then cut them into pieces.

Mix with the rest.

Add the cooked rice, salt and pepper to taste, add a teaspoon of sugar and nuoc mam (3/4 of a tablespoon).

Mix well then add chopped coriander, 3 chopped chives, fried onions (a handful) and peanuts.

One last mix and it’s ready!
