آخر وصفة (في الوقت الحالي) من smørrebrød على مدونة الطبخ الخاصة بي. بعد إقامتي في كوبنهاغن ، عدت مع هذه الوصفات البسيطة جدًا التي يجب صنعها في المنزل. مع الوصفات الثلاث التي نشرتها للتو ، لديك ما يكفي لتحضير وجبة لذيذة وسريعة. بالطبع ، أخطط لوضع خبز rugbrød الشهير لـ smørrebrød !
وصفة لأربعة أشخاص:
شريحتان من سمك السلمون (إجمالي 260 جم)
10 بطارخ تراوت أو سلمون
1/4 بصلة حمراء
1 ملعقة كبيرة من نبات الكبر
25 جرام مايونيز
30 جرام كريمة ثقيلة
ملح ، فلفل ، زيت زيتون
1 حزمة من الهليون الأخضر
4 شرائح سلمون مدخن
4 شرائح خبز الجاودار الدنماركي
اطبخ السلمون. غالبًا ما آخذ سمك السلمون البيكارد (لست برعاية !!) ، لأنه مناسب جدًا. خلاف ذلك بالطبع ، خذ الحصى الخام من بائع السمك الخاص بك. يُطهى السلمون في الماء المغلي / المغلي لمدة 10 دقائق.
بمجرد طهيها ، ضعيها في ماء بارد. في هذه الأثناء ، يمكنك طهي الهليون الأخضر على نار عالية مع القليل من زيت الزيتون. يجب أولاً غسلها جيدًا ثم تحميرها لمدة 3-4 دقائق بغطاء مع التحريك من حين لآخر.
اجلس جانبا.
في وعاء ، ضعي السلمون المطبوخ والمبرد ، ثم اهرسيه بالشوكة ، ثم أضيفي ربع البصل الأحمر المقشر والمفروم ، والكبر المفروم ناعماً ، والسلمون المرقط أو بيض السلمون ، والمايونيز ، والقشدة الثقيلة ، ثم الملح والفلفل حسب الرغبة.
تخلط بلطف.
نقطع الخبز إلى شرائح ونحمص 4 منها في المحمصة أو في الفرن لبضع دقائق على حرارة 170 درجة مئوية.
حضري السلمون بوضع طبقة جيدة من السلمون ، ثم أضيفي شريحة من السلمون المدخن ، وملعقة صغيرة من بطارخ السلمون المرقط ، ثم ضعي فوقها الهليون الأخضر. قدميها على الفور!
Mettez le saumon à cuire. Je prends souvent le saumon Picard (je ne suis pas sponsorisé !!), car il est très pratique. Sinon bien sûr, prenez des pavés crus chez votre poissonnier. Mettez le saumon à cuire à l’eau bouillante/frémissante pendant 10 minutes.
Une fois cuit, mettez-le dans l’eau froide. Pendant ce temps, vous pouvez cuire les asperges vertes sur feu fort avec un peu d’huile d’olive. Il faut d’abord bien les laver puis les faire saisir pendant 3-4 minutes avec un couvercle en remuant de temps en temps. Mettez de côté.
Dans un récipient, mettez le saumon cuit et refroidi, écrasez-le à la fourchette, puis ajoutez le quart d’oignon rouge épluché et haché, les câpres finement hachées, les œufs de truite ou de saumon, la mayonnaise, la crème épaisse, puis salez et poivrez à votre goût. Mélangez délicatement.
Coupez le pain en tranches et faites griller 4 d’entre elles au grille pain ou au four quelques minutes à 170°C.
Préparez les smørrebrød en mettant une bonne couche de préparation au saumon, puis ajoutez une tranche de saumon fumé, une cuillerée à café d’œufs de truite, puis surmontez le tout avec des asperges vertes. Servez sans attendre !
